Almond Cashew Milk Concentrate


( Please Note: This is a Dairy Free Recipe. The almond milk paste when mixed with water in a blender becomes almond milk and is a dairy substitute. Hence please do not add milk )

Requirements:

1.5 Cups of Almonds ( Dry and not soaked)

½ Cup Cashew

1 tsp of Khus Khus ( Poppy Seeds )

2-3 tsps of Cocoa butter or 2-3 tsps of Ghee (Home made the traditional way)

Note: Remember that moisture will impact the shelf life of the paste. All the ingredients need to be dry and without any water.

Take almonds+ ½ cup cashew in a grinder jar. You don’t need to add water, Grind this mixture well. As you continue grinding, the nut mixture will pass through multiple stages. It will become a powder, slowly as you continue grinding, it will start to clump together and then it will start liquefying. To aid this process you can add about 2-3 tsps of Cocoa butter or ghee.

Grind it well taking occasional breaks as the mixture can tend to heat and also put a load on the grinder. Once this mixture has become a fine paste it is done- this is your basic nut milk concentrate.

Store the paste in a stainless steel container in your refrigerator.

Shelf Life when refrigerated: 1-2 weeks

For Milk Preparation:

To make 1 cup of nut milk take 1 tablespoon ( or two) of this paste and 200ml/Glass of water ( cold or hot depending on how you want the milk) and then blend in a blender. While travelling you can also use a Coffee shaker glass to blend the paste along with water.

You can use this milk to make fruit salads, smoothies etc. To sweeten the milk you can add either add honey or can also blend the paste with 2-3 Kimea dates.

For those of you who prefer sweet milk, you can incorporate the Kimea dates ( or any other soft dates) while making the nut paste

 

Here is a recipe that incorporates Kimea dates or any other softer dates variants.

Sweet Almond Milk Concentrate

Requirements

1.5 Cups of Almonds

½ Cup Cashew

1 tsp of Khus Khus ( Poppy Seeds )

2-3 tsps of Ghee ( Home made or made the traditional way )

15-20 Kimea dates ground into a fine paste ( Do not add water)

Note: Remember that moisture will impact the shelf life of the paste. All the ingredients need to be dry and without any water. If you suspect that there might be some moisture in the dates, then keep the paste in the deep freezer so that it is frozen and would therefore last longer

Take almonds+ ½ cup cashew in a grinder jar and follow the same steps as in the basic nut milk concentrate recipe.

Once the mixture has become a fine paste, add the dates paste and grind till it gets incorporated uniformly

Store the paste in a stainless steel container in your refrigerator.

Shelf life when refrigerated. 3-6 days
