A Comprehensive Guide to Probiotic and Fermented Foods of Uttarakhand

Uttarakhand, meaning "Northern Land," is a mountainous state in northern India, carved out of the state of Uttar Pradesh in the year 2000. It shares borders with Himachal Pradesh to the west, Uttar Pradesh to the south, Haryana to the southwest (via a small corridor), and Nepal (Sagarmatha and Koshi zones) to the east, and the Tibetan Autonomous Region of China to the north. The state is entirely mountainous, divided into two distinct geographic and cultural regions: the Garhwal region (the western and central districts: Uttarkashi, Chamoli, Rudraprayag, Tehri Garhwal, Pauri Garhwal, Haridwar, Dehradun) and the Kumaon region (the eastern districts: Almora, Nainital, Pithoragarh, Bageshwar, Champawat, Udham Singh Nagar). The elevation ranges from approximately 300 meters in the southern Shivalik hills (Haridwar, Dehradun, Nainital) to over 7,800 meters at Nanda Devi (the highest peak entirely within India). The climate varies dramatically by altitude. The southern Shivalik hills and the Doon Valley (Dehradun) have a subtropical climate (classification: Cfa to Cwa), with hot summers (30 to 38 degrees Celsius) and mild winters (5 to 15 degrees Celsius). The mid hills (Almora, Nainital, Pauri, Chamoli, Tehri, Pithoragarh) have a temperate climate (classification: Cwb), with mild summers (20 to 28 degrees Celsius) and cold winters (minus 5 to 10 degrees Celsius), with significant snowfall at higher elevations (above 2,000 meters). The high Himalayan regions (Uttarkashi, Chamoli, Pithoragarh) have a cold desert or alpine climate (classification: ET or BWk), with very cold winters (minus 20 to minus 5 degrees Celsius), brief cool summers (10 to 20 degrees Celsius), and low precipitation due to rain shadows. The state receives significant rainfall during the monsoon season (July to September), particularly in the southern and mid hills, but the higher regions (especially the northern parts of Uttarkashi, Chamoli, and Pithoragarh) are rain shadows.


This extreme mountainous climate has profoundly shaped Uttarakhand's fermentation traditions. Like Himachal Pradesh, the cold temperatures (especially in winter) mean that spontaneous fermentation is very slow and unreliable. Therefore, traditional practices rely heavily on starter cultures that are preserved from previous batches. The state has a rich tradition of fermenting grains (barley, buckwheat, millets, rice), dairy products (dahi, ghee, churpi, maa, paneer ferments), and alcoholic beverages (jhangora ki jaag, daru). The state is also known for its unique fermented soybean products (kinema, bhatt ki chutney) and fermented bamboo shoots (tama, meshino). The state is home to the Garhwali and Kumaoni people, with a culinary heritage shaped by the diverse communities including the Brahmin, Rajput, Thakur, Rawat, Koli, Bhotiya (tribal), Jaunsari, Buxa (tribal), and Tharu communities. The cuisine is predominantly vegetarian in the lower and mid hills, but tribal communities (particularly the Bhotiya, Jaunsari, and Tharu) incorporate meat, fermented soybeans, and bamboo shoots as staples.


Fermented foods are intrinsic to the traditional diet of Uttarakhand. The state is particularly known for its unique fermented grain products (jhangora ki kheer, kachma, sez, siyaro), its fermented soybean and bamboo shoot products (kinema, tama), its fermented dairy products (dahi, ghee, churpi, maa), and its fermented alcoholic beverages (jhangora ki jaag, daru, chhang). Unlike the dairy dominated ferments of the plains, Uttarakhand's ferments are more diverse and share many similarities with Himachal Pradesh and the Himalayan regions of Nepal.


Scientific studies have isolated several probiotic lactic acid bacteria and yeasts from Uttarakhand's fermented foods, including various species of Lactobacillus, Lactococcus, Leuconostoc, Pediococcus, Bacillus (for kinema), and Saccharomyces cerevisiae (for alcoholic beverages). The fermented soybean product kinema and the fermented bamboo shoot tama have been particularly well studied for their unique microbial ecology.


This document organizes the major fermented foods of Uttarakhand by substrate type: fermented grain and millet products, fermented dairy products, fermented soybean products, fermented bamboo shoots, fermented pickles and condiments, fermented beverages (alcoholic and non alcoholic), and starter cultures.

Part 1: Fermented Grain and Millet Products


The staple grains of Uttarakhand vary by altitude. In the lower hills (Shivalik range, Haridwar, Dehradun, Nainital), wheat, rice, and maize are common. In the mid hills (Almora, Pithoragarh, Pauri, Chamoli, Tehri), rice, barley (jau), buckwheat (kuttu), amaranth (chulai, ramdana), mandua (finger millet, Eleusine coracana), jhangora (barnyard millet, Echinochloa frumentacea), and koda (hairy millet or Kodo millet, Paspalum scrobiculatum) are staple grains. In the higher Himalayan regions (Bhotiya settlements in Uttarkashi, Chamoli, Pithoragarh), barley, buckwheat, and jhangora are staples. Fermentation is essential for making these grains (especially the hard millets and buckwheat) digestible, enhancing their nutritional value (reducing phytic acid, increasing B vitamins), and producing traditional dishes.


Jhangora ki Kheer (Fermented barnyard millet sweet porridge)


Jhangora (barnyard millet) is a staple grain in the Garhwal and Kumaon hills. A traditional fermented sweet porridge called "jhangora ki kheer" is made. Jhangora grains are soaked overnight, then cooked in water until soft. The cooked millet is mixed with jaggery (gur) or sugar, cardamom, and a small amount of sour buttermilk (chaas) or yogurt (dahi) as a starter. The mixture is left to ferment for 4 to 6 hours (or overnight). The fermentation is driven by LAB from the buttermilk. The result is a sour, sweet, thick porridge. It is consumed as a dessert or as a breakfast item. The fermentation enhances the bioavailability of iron and calcium (jhangora is rich in both) and reduces phytic acid. The product is often consumed without further cooking (raw), making it a genuine probiotic food. However, some households cook the kheer after fermentation, which kills the live microbes. For probiotic benefits, consume the raw, fermented version. Pregnant women and immunocompromised individuals should consume only the cooked version.


Sez (Fermented buckwheat or millet bread of the Bhotiya tribe)


Sez is a traditional fermented bread of the Bhotiya tribal community (who are ethnically related to Tibetans) living in the high Himalayan regions of Uttarakhand (Uttarkashi, Chamoli, Pithoragarh). It is made from buckwheat flour (kuttu) or mandua (finger millet) flour. The flour is mixed with water, salt, and a starter (a small amount of old fermented dough or sour buttermilk). The dough is left to ferment for 6 to 8 hours (or overnight) in a warm spot near the hearth. The fermentation is essential for buckwheat and millet flours, which are naturally gluten free and difficult to work with. After fermentation, the dough is shaped into flatbreads and cooked on a hot griddle (tawa) or directly over a flame. The cooking kills live microbes. Sez is typically served with ghee (clarified butter), chutney (often made from fermented soybeans or bamboo shoots), or a simple vegetable curry.


Siyaro (Fermented barley or buckwheat dosa like pancake of Kumaon)


Siyaro (also called "silo" or "syalo" in some dialects) is a traditional fermented pancake from the Kumaon region (Almora, Nainital, Pithoragarh, Bageshwar). It is made from a batter of barley flour (jau), wheat flour, or a mixture of grains, mixed with water, salt, and sour buttermilk (chaas). The batter is left to ferment for 4 to 6 hours. After fermentation, the batter is poured onto a hot griddle (tawa) and spread into a thick pancake, similar to a South Indian dosa but thicker and smaller. Siyaro is cooked with ghee or oil. The cooking kills live microbes. Siyaro is typically served with ghee, chutney, or yogurt (dahi). It is a popular breakfast item in Kumaoni households.


Kachma (Fermented steamed bread of Garhwal)


Kachma is a traditional fermented steamed bread from the Garhwal region (Tehri, Pauri, Rudraprayag, Chamoli). It is very similar to the Himachali "siddu." The dough is made from wheat flour (or a mixture of wheat and barley flour), water, salt, and sour buttermilk (chaas). The dough is left to ferment for 6 to 8 hours. After fermentation, the dough is shaped into balls, flattened, stuffed with a filling (typically mashed potatoes, green chilies, and spices, or a sweet filling of jaggery and sesame seeds), and then steamed for 15 to 20 minutes. The steaming kills all live microbes. Kachma is served hot with ghee, butter (makhan), or a spicy green chutney.


Fermented Mandua Roti (Finger millet flatbread)


Mandua (finger millet, ragi) is a staple grain in the Kumaon and Garhwal hills. Mandua roti is traditionally made from unfermented dough, but a fermented version exists in many households. Mandua flour is mixed with water, salt, and sour buttermilk, and the dough is left to ferment for 4 to 6 hours. Fermentation reduces the phytic acid in mandua (which is very high, similar to bajra) and significantly improves the bioavailability of iron and calcium (mandua is exceptionally rich in both). It also makes the roti softer and less dry. After fermentation, the dough is rolled into flatbreads and cooked on a hot griddle (tawa). The cooking kills live microbes. Fermented mandua roti is typically served with ghee, chutney, yogurt, or a thick dal.


Fermented Jhangora Roti (Barnyard millet flatbread)


Jhangora roti is made from barnyard millet flour. The dough is fermented with sour buttermilk for 4 to 6 hours, then cooked as flatbread. The fermentation enhances mineral bioavailability.


Bhatt ki Churdkani (Fermented black soybean dish, see Part 3)


While primarily a soybean ferment, "bhatt ki churdkani" also involves grains. It is covered in Part 3 (Soybean products).


Fermented Rice (Peej or Kanji)


In the lower and mid hills (Haridwar, Dehradun, Nainital, Almora), a fermented rice water and rice grain product similar to the Tamil "seepu" and the Himachali "bhaat ki kanji" is made. Cooked rice is mixed with water and left to ferment overnight (8 to 12 hours). The resulting liquid is consumed as a beverage (peej or kanji), and the rice grains are eaten as a meal, often with salt, green chilies, and raw onions. This is a genuine probiotic beverage when consumed raw (not reheated). It is particularly common in the summer months. It should be consumed within 24 hours.

Part 2: Fermented Dairy Products


Uttarakhand has a strong dairy tradition, particularly in the mid hills where the Bhotiya and other pastoral communities rear cows, buffaloes, goats, and sheep. However, unlike the plains of Punjab, the cold climate meant that preservation through fermentation was essential. Unique products like "churpi" (shared with Himachal) and "maa" (a fermented milk drink) are important.


Churpi (Hardened fermented cheese of the higher Himalayan regions)


Churpi is made in the higher Himalayan regions of Uttarakhand (Bhotiya settlements in Uttarkashi, Chamoli, Pithoragarh). The process is identical to that described in the Himachal Pradesh guide. Milk (cow, buffalo, goat, or yak) is boiled, fermented into dahi (yogurt), churned to separate butter (makhan), and the buttermilk is boiled to coagulate the milk solids. The solids are pressed, dried, and smoked. The final product is extremely hard, chewy, and can be stored for years without refrigeration. Churpi is chewed as a snack or soaked to soften and added to curries. Hard churpi can damage teeth. Studies have isolated probiotic LAB from churpi. Pregnant women and individuals with dental issues should exercise caution.


Maa (Fermented sweet curd drink of the Bhotiya tribe)


Maa is a traditional fermented dairy beverage of the Bhotiya tribe. It is made by mixing fresh dahi (yogurt) with water, jaggery (gur), and sometimes a small amount of barley flour or roasted grain flour. The mixture is left to ferment for 2 to 3 days at room temperature. The fermentation is driven by LAB from the dahi and also by yeasts (if grains are added). The resulting beverage is sweet, sour, effervescent, and mildly alcoholic (alcohol content 1 to 2 percent). Maa is consumed as a refreshing drink, as a digestive, and during festivals. It is a genuine probiotic beverage, but the alcohol content means pregnant women should avoid it. The alcohol content is low, but it is still present.


Dahi (Curd or Yogurt)


Dahi is prepared similarly to other Indian states, but the cold climate requires special techniques. Milk is boiled, cooled to lukewarm (40 to 45 degrees Celsius), and inoculated with a starter culture (jaman or khatta dahi). In the cold winters (temperatures dropping below freezing in higher regions), the inoculated milk is placed in the warmest spot in the house: near the hearth (chulha), inside a quilt (rajai) wrapped pot, or inside an insulated box (a traditional "dahi bhanda" made of wood and padded with cloth). Fermentation may take 12 to 16 hours. Dahi is consumed daily in the lower and mid hills. Dahi is a genuine probiotic food.


Makhan (Cultured white butter)


Makhan is the butter that separates from dahi during churning. It is not heated and retains live LAB. Makhan is consumed spread on roti, kachma, sez, or siyaro, or mixed into khichdi and dal. It is a probiotic food.


Ghee (Cultured butter ghee)


Traditional Uttarakhandi ghee is made from makhan (cultured butter), not from fresh cream. The culturing gives the ghee a distinct, nutty flavor. Ghee is not probiotic (heating kills all microbes), but it is nutritionally superior to ghee made from fresh cream.


Lassi and Chaas (Fermented buttermilk drinks)


Lassi and chaas are consumed in the lower and mid hills (Dehradun, Haridwar, Nainital, Almora), similar to Punjab. In the higher regions, these are less common due to the scarcity of fresh milk and the preference for preserved dairy (churpi).


Kadhi (Fermented yogurt curry)


Kadhi is prepared in the lower and mid hills. It is made from sour dahi and chickpea flour (besan), tempered with spices and ghee. It is served with rice or khichdi.

Part 3: Fermented Soybean Products


Uttarakhand has a very strong tradition of fermenting soybeans, particularly in the Kumaon region (Almora, Nainital, Pithoragarh, Bageshwar, Champawat) and the Bhotiya tribal areas. This is arguably the most distinctive feature of Uttarakhand's fermentation tradition. The fermented soybean products are similar to the "kinema" of Sikkim and the "hawaijar" of Manipur.


Kinema (Fermented soybean of Kumaon and Garhwal)


Kinema is a fermented soybean product made in the Kumaon region (Almora, Nainital, Pithoragarh, Bageshwar, Champawat) and also in some parts of Garhwal (Chamoli, Rudraprayag). The process is identical to that of Himachal Pradesh. Soybeans are boiled until soft, drained, cooled, and then wrapped in fresh green leaves (banana leaves, fig leaves, or rhododendron leaves). The wrapped soybeans are placed in a warm spot (near the hearth or in a basket lined with leaves) and left to ferment for 2 to 3 days. The fermentation is driven by Bacillus subtilis, producing a sticky, stringy, pungent, and highly alkaline product (pH 8 to 9). Kinema has a characteristic ammonia like smell (similar to strong cheese). Fresh kinema is used as a condiment, added to curries, or stir fried with vegetables and spices. It is also sun dried into kinema balls (called "kinema bari" or "bhatt ki bari") for long term storage. The cooking (stir frying or boiling) kills the Bacillus subtilis. Fresh, uncooked kinema is a live fermented food. Safety note: Only consume from trusted traditional sources. A black, green, or pink discoloration or a putrid, fecal smell indicates spoilage. Pregnant women and immunocompromised individuals should avoid raw kinema and consume only cooked kinema.


Bhatt ki Churdkani (Fermented black soybean curry)


Bhatt (black soybean, Glycine max, a small black seeded variety) is a traditional crop in the Kumaon hills. Bhatt ki churdkani is a fermented black soybean curry. Black soybeans are soaked overnight, then boiled until soft. The boiled beans are mixed with salt and sometimes a small amount of sour buttermilk, and left to ferment for 1 to 2 days. The fermentation is driven by LAB (and possibly Bacillus species). The resulting fermented beans are then cooked with spices (ginger, green chilies, coriander, turmeric) into a thick curry. The fermentation enhances the digestibility of black soybeans (which are harder to digest than yellow soybeans) and reduces flatulence causing oligosaccharides. The cooking kills live microbes. Bhatt ki churdkani is typically served with rice (bhatt ki churdkani chaawal) and is a staple in Kumaoni cuisine, especially in the winter months.


Kinema Bari / Bhatti Bari (Sun dried fermented soybean balls)


In Kumaon and Garhwal, fresh kinema is shaped into small balls and sun dried for several days to produce "kinema bari" (also called "bhatti bari" or "gras ki bari"). These dried balls can be stored for months without refrigeration. They are rehydrated by soaking in water and then added to curries, dals, or vegetable dishes. The rehydrated bari are cooked, which kills the Bacillus subtilis. This product is a traditional preservation method for kinema.


Fermented Soybean Chutney (Bhatt ki Chutney)


Fresh or rehydrated kinema is sometimes ground with salt, green chilies, ginger, and coriander to make a pungent, sour, spicy chutney. The chutney is often consumed raw (uncooked), making it a genuine probiotic food. However, due to the pungent flavor and the potential for contamination, it should be consumed only from trusted sources. Pregnant women should avoid raw kinema chutney.

Part 4: Fermented Bamboo Shoots


The Bhotiya and other tribal communities in the high Himalayan regions of Uttarakhand (Uttarkashi, Chamoli, Pithoragarh), as well as the Tharu community in the southern terai regions (Udham Singh Nagar, Nainital), have a tradition of fermenting bamboo shoots. This practice is similar to the bamboo shoot fermentation in Himachal, Karnataka, and the Northeast Indian states.


Tama (Fermented bamboo shoots of the Bhotiya tribe)


Tama (also called "meshino" or "sinki" in some dialects) is the traditional fermented bamboo shoot product of the Bhotiya tribe. Young bamboo shoots are harvested, peeled, sliced (or shredded), and then packed into an earthen pot or a hollow bamboo tube with salt (5 to 10 percent). The container is sealed (often with banana leaves or cloth) and left to ferment for 7 to 15 days. The fermentation is driven by LAB, primarily Lactobacillus plantarum and Leuconostoc species. The resulting tama is sour, pungent (with a characteristic cheesy aroma), and salty. Tama is used as a condiment, added to curries (tama ko curry), or stir fried with vegetables and meat. Tama is often cooked (which kills the LAB), but it is also consumed raw in small quantities as a condiment. Raw tama is a genuine probiotic food. Safety note: Improperly fermented bamboo shoots can retain toxic cyanogenic glycosides. Only from trusted sources. A putrid, ammoniacal, or fecal smell, a slimy texture, or black/green mold indicates spoilage. Pregnant women should avoid raw tama and consume only cooked tama.


Meshino (Fermented bamboo shoot of Garhwal)


Meshino is the term for fermented bamboo shoots in the Garhwal region (Chamoli, Rudraprayag, Uttarkashi). The process is identical to tama. Meshino is used in curries and as a pickle.


Fermented Bamboo Shoot Pickle (Tama ko Achar)


In the Bhotiya and Kumaoni communities, fermented bamboo shoots are sometimes mixed with additional salt, mustard oil, chili powder, and spices to make a fermented pickle (tama ko achar). The pickle is left to ferment for an additional 5 to 7 days. The high salt and oil content preserve the pickle for months. This pickle is a genuine probiotic food (the LAB survive in the high salt environment). However, the high salt content limits consumption.


Sinki (Fermented radish taproot, similar to bamboo shoot ferment)


Sinki is a fermented radish taproot product similar to tama. It is made by the Tharu community in the terai regions (Udham Singh Nagar). The process is similar to bamboo shoot fermentation. Sinki is used in curries and pickles.

Part 5: Fermented Pickles and Condiments


Uttarakhand's pickling tradition includes both North Indian style oil and salt pickles and unique fermented pickles made from local forest produce.


Khirwa (Fermented bamboo seed pickle)


Khirwa is a unique fermented pickle made from the seeds of a local bamboo species. The seeds are harvested, cleaned, and mixed with salt, chili powder, asafoetida, and mustard oil, then left to ferment for 10 to 15 days. This product is extremely rare and is found only in remote Bhotiya settlements.


Lime Pickle (Nimbu ko Achar) and Mango Pickle (Aam ko Achar)


These are prepared similarly to North Indian styles, with salt, spices, and mustard oil, and fermented in the sun for 15 to 30 days.


Fermented Green Chili Pickle (Hari Mirch ko Achar)


Green chilies are slit and packed with salt, mustard oil, and asafoetida, and left to ferment for 10 to 15 days.


Fermented Garlic Chutney (Lasun ko Chutney)


Garlic cloves are crushed with salt, chili powder, and mustard oil, and left to ferment for 5 to 7 days. The fermentation reduces the pungency of raw garlic.


Ghat ki Daal (Fermented black gram dal, not actually fermented)


Note: "Ghat ki daal" is a famous Kumaoni dish, but it is not fermented. It is made from black gram (urad dal) that is soaked and sun dried (not fermented). It is included here only to clarify that it is not a fermented product, despite what some sources may claim.

Part 6: Fermented Beverages


Uttarakhand has a rich tradition of fermented beverages, both non alcoholic (dairy based) and alcoholic (grain based). The alcoholic beverages are particularly important in the tribal regions and are consumed during festivals, weddings, and as daily refreshment in the cold climate.


Jhangora ki Jaag (Fermented barnyard millet beer of the Bhotiya tribe)


Jhangora ki jaag is a traditional fermented grain beer (alcoholic beverage) of the Bhotiya tribe. It is made from jhangora (barnyard millet). The millet grains are cooked, cooled, and mixed with a starter culture called "balam" (see Part 7). The inoculated grain is packed into an earthen pot or a wooden vessel, covered, and left to ferment for 3 to 5 days. The fermentation is driven by a consortium of yeasts (Saccharomyces cerevisiae and other wild yeasts) and LAB. After fermentation, hot water is poured over the fermented grain, and the liquid (jaag) is strained and consumed. The alcohol content is typically 4 to 8 percent. Jaag is milky white or pale yellow, effervescent, sour, and mildly sweet. It is consumed warm, especially in winter. Jaag contains live yeasts and LAB, so it is a genuine probiotic beverage (though the alcohol content limits its use as a probiotic). Pregnant women should avoid it entirely.


Daru (Fermented rice or millet beer of Kumaon and Garhwal)


Daru (also called "chhang" in some regions) is a generic term for fermented grain beer in Kumaon and Garhwal. It is made from rice, barley, or millets (jhangora, mandua), using a starter culture called "dhaat" or "phab" (similar to Himachal). The process is identical to chhang. The alcohol content is 3 to 8 percent. Daru is consumed during festivals, weddings, and social gatherings. Pregnant women should avoid it.


Chhang (Fermented grain beer, similar to daru)


Chhang is the term used in the high Himalayan regions (Bhotiya settlements), similar to the chhang of Himachal and Ladakh. It is made from barley or millets.


Maa (Already covered in Part 2)


Maa is a fermented dairy beverage with low alcohol content (1 to 2 percent).


Fermented Rice Water (Peej or Kanji, already covered in Part 1)


This non alcoholic, LAB fermented beverage is also consumed.


Jhol (Fermented buttermilk soup)


Similar to Himachal, a thin, sour, fermented buttermilk soup called "jhol" is consumed in the mid hills.

Part 7: Starter Cultures and Fermentation Vessels


Uttarakhand's cold climate and reliance on specific ferments have produced unique starter cultures and vessels.


Balam (Traditional starter culture for jhangora ki jaag and daru)


Balam is a traditional starter culture used by the Bhotiya tribe for making jhangora ki jaag and other grain beers. It is a dried cake made from a mixture of ground jhangora flour (or rice flour), wild herbs and roots (which provide yeasts and have antimicrobial properties), and a small amount of previous batch of balam. The mixture is formed into small cakes and dried. Balam is analogous to the "dhaat" of Himachal and the "murcha" of Nepal. The microbial consortium includes Saccharomyces cerevisiae, various LAB, and amylase producing molds. The exact composition is a family secret.


Dhaat / Phab (Starter for daru and chhang)


In the Kumaon and Garhwal regions, the starter for grain beers is called "dhaat" or "phab," similar to Himachal. These are dried cakes made from grains and wild herbs.


Jaman or Khatta Dahi (Sour curd starter for dairy)


As in other North Indian states, households maintain a reserved sour curd starter called "jaman" or "khatta dahi" to inoculate fresh milk.


Buttermilk (Chaas) as a starter for grain ferments


For non alcoholic grain ferments (kachma, sez, siyaro, mandua roti, jhangora ki kheer), sour buttermilk (chaas) or sour yogurt (dahi) is used as the starter.


Earthen pots (Matka, Handi, Ghada)


Earthen pots are used for fermenting dahi, jhangora ki jaag, daru, and pickles. In the cold winters, these pots are wrapped in quilts or placed near the hearth.


Wooden and bamboo vessels (Dhunga, Thok, Kasa)


In the Bhotiya and Kumaoni communities, traditional vessels made from wood (hollowed logs called "dhunga" or "thok") and bamboo (woven baskets called "kasa") are used for fermenting daru, jaag, and tama. The wood and bamboo retain resident microbial biofilms. These vessels are often not washed with soap (only rinsed with water) to preserve the microbial community.


Leaves as wraps (Rhododendron, banana, fig, oak)


Leaves (freshly picked) are used as wraps for fermenting kinema. Rhododendron leaves are particularly prized for their flavor and antimicrobial properties. Banana leaves and fig leaves are also used.


Stone vessels (In cold desert regions of Pithoragarh)


In the high altitude regions of Pithoragarh (Bhotiya settlements), stone vessels carved from river stones are sometimes used for fermenting dahi and storing churpi. The stone provides insulation.

Final Safety and Consumption Note


While traditional fermented foods of Uttarakhand offer significant nutritional and probiotic benefits, several safety considerations specific to the state's mountainous terrain, cold climate, and unique tribal ferments should be noted.


For fermented grain and millet products (jhangora ki kheer, sez, siyaro, kachma, mandua roti, jhangora roti, fermented rice water): Kachma, sez, siyaro, mandua roti, and jhangora roti are cooked (steamed, griddled, pan fried), which kills all live microorganisms. They are safe for everyone. Jhangora ki kheer is often consumed raw (uncooked) and is a live probiotic food. Only consume raw kheer with a clean, sour smell (like yogurt). Pregnant women and immunocompromised individuals should consume only the cooked version. Fermented rice water (peej/kanji) is a live probiotic beverage; consume within 24 hours. Dough that has fermented for too long (more than 10 hours in summer, more than 20 hours in winter) may become excessively sour or develop off flavors. A putrid smell, visible mold, or slimy texture indicates spoilage.


For dairy products (churpi, maa, dahi, makhan, ghee, lassi, chaas, kadhi): Churpi: hard churpi can damage teeth; individuals with dental issues should avoid chewing hard churpi. Soft churpi (soaked) is safer. Churpi is generally safe for healthy individuals. Maa is a fermented dairy beverage with low alcohol content (1 to 2 percent). Pregnant women should avoid it. Dahi, makhan, lassi, and chaas are genuine probiotic foods. They are generally safe for healthy individuals and pregnant women. Kadhi, if gently heated, is safe. Ghee is safe.


For fermented soybean products (kinema, bhatt ki churdkani, kinema bari, bhatt ki chutney): Kinema is produced by Bacillus subtilis. Only consume from trusted traditional sources. Fresh kinema should have a clean, ammonia like smell (similar to strong cheese). A black, green, or pink discoloration or a putrid, fecal smell indicates spoilage. Pregnant women and immunocompromised individuals should avoid raw kinema and consume only cooked kinema. First time consumers start with a very small amount (less than 10 grams). Bhatt ki churdkani (curry) is cooked and safe. Kinema bari are dried and then cooked; safe. Bhatt ki chutney (if raw) has the same risks as raw kinema; pregnant women avoid.


For fermented bamboo shoots (tama, meshino, sinki, tama ko achar): Only from trusted traditional sources. Fermented bamboo shoots should have a clean, sour, slightly cheesy aroma (not putrid, not ammoniacal). A slimy texture, black or green mold, or a putrid smell indicates spoilage. Pregnant women should avoid raw tama and consume only cooked tama. Tama ko achar (pickle) has high salt content; consume in small quantities. Individuals with hypertension, kidney disease, or heart failure should limit consumption.


For fermented pickles and condiments (khirwa, lime, mango, chili, garlic): High salt content (10 to 20 percent). Individuals with hypertension, congestive heart failure, or chronic kidney disease should consume in very small quantities or avoid. Pregnant women can consume in small amounts. Discard if slimy, off color, putrid, or moldy.


For fermented beverages (jhangora ki jaag, daru, chhang, maa, peej, jhol): Jhangora ki jaag, daru, and chhang are alcoholic (3 to 8 percent alcohol). Pregnant women avoid entirely. Individuals on medications that interact with alcohol avoid. Only consume from trusted traditional sources; adulteration with methanol has occurred in illicit liquor. Maa has low alcohol (1 to 2 percent); pregnant women avoid. Peej (fermented rice water) and jhol are non alcoholic (alcohol below 0.5 percent) and safe for everyone, including pregnant women.


For individuals on monoamine oxidase inhibitor (MAOI) medications: Aged products such as long fermented churpi and long fermented kinema may contain elevated tyramine levels. These individuals should avoid aged fermented foods or consult their physician.


For general consumers: Start with small quantities of any new fermented food to assess tolerance. Pregnant women, immunocompromised individuals, and infants under one year should consult a physician before adding significant quantities of live fermented foods to their diet. For cooked fermented products (kachma, sez, siyaro, mandua roti, cooked kheer, cooked kinema, bhatt ki churdkani, cooked tama, kadhi), no consultation is needed.

Note on Altitude and Fermentation: At high altitudes (above 2,500 meters), lower pressure and temperature affect fermentation. Water boils at lower temperatures (90 to 95 degrees Celsius), which may not fully sterilize equipment. Traditional practices use longer fermentation times, larger amounts of starter, and warm spots near the hearth.


Note on Respect for Tribal Knowledge: The Bhotiya, Jaunsari, Tharu, and other tribal communities have preserved these fermentation traditions for generations.
