A Comprehensive Guide to Probiotic and Fermented Foods of West Bengal

West Bengal, a state in eastern India, stretches from the Himalayan foothills in the north to the Bay of Bengal in the south. The state has a diverse range of climatic zones. The northern districts (Darjeeling, Kalimpong) have a subtropical highland climate with cool temperatures (5 to 20 degrees Celsius) and high rainfall. The Gangetic plain (Murshidabad, Nadia, Burdwan, Hooghly) has a tropical wet and dry climate (classification: Aw) with hot summers (up to 40 degrees Celsius), high humidity (70 to 85 percent), and a distinct monsoon season (June to September). The Sundarbans delta region (South 24 Parganas, North 24 Parganas) has a tropical wet climate with very high humidity (80 to 90 percent) and saline influences. The western plateau (Purulia, Bankura, Birbhum) has a drier tropical climate with lower rainfall and wider temperature variations.


These climatic zones produce distinct fermentation traditions. The humid Gangetic plain, with its abundant rice cultivation, is the heart of Bengal's fermentation culture. The cool Himalayan foothills produce unique dairy and grain ferments influenced by Nepali and Tibetan traditions. The saline delta region has specialized ferments involving fish and prawns. West Bengal is unique among Indian states in having a strong tradition of fermented fish products (similar to Northeast India and Southeast Asia), fermented leafy vegetables, and a wide variety of fermented lentil and rice batters. The state is also famous for its fermented sweets and confections.


The state is home to the Bengali people, with a culinary heritage shaped by the major dynasties (Palas, Senas, Mughals, British) and diverse communities including Hindus (Brahmins, Kayasthas, Baidyas), Muslims, and tribal groups (Santhals, Mundas, Oraons). Fermented foods are intrinsic to the traditional Bengali diet, which is famously centered on rice and fish. Unlike the predominantly grain and legume ferments of South India, Bengal's ferments include a significant proportion of fish, vegetables, and dairy.


Scientific studies have isolated several probiotic lactic acid bacteria from Bengal's fermented foods, including various species of Lactobacillus, Leuconostoc, Pediococcus, and Enterococcus. The state's tradition of fermented fish has also been studied for the presence of halotolerant LAB and the reduction of histamine (biogenic amine) levels.

Part 1: Fermented Fish and Seafood


West Bengal, particularly the Bengali Hindu community, has a profound tradition of consuming fermented fish products. This tradition is shared with the Northeast Indian states (Assam, Manipur, Nagaland) and with Southeast Asia (particularly Myanmar, Thailand, and Laos). Unlike the sun dried, salted fish of coastal South India, Bengal's fermented fish products involve controlled fermentation with salt and sometimes spices.


Shidal (Fermented fish paste)


Shidal is a traditional fermented fish product of West Bengal and Northeast India, particularly popular in the districts of North 24 Parganas, South 24 Parganas, Nadia, and Murshidabad. It is made from small freshwater fish (primarily Puntius species, commonly called "punti" or "borali" fish). The fish are cleaned, sun dried partially, and then packed tightly into an earthen pot (called a "shidal matka") with salt (approximately 15 to 20 percent by weight). The pot is sealed with clay and left to ferment for 6 months to one year. The fermentation is driven by halotolerant lactic acid bacteria (primarily Tetragenococcus halophilus and Lactobacillus plantarum) and certain yeasts. The fish proteins are hydrolyzed into amino acids and peptides, producing a strong, pungent, characteristic aroma (often described as intensely fishy and slightly cheesy). The resulting product is a semi solid, brownish black paste. Shidal is used in tiny quantities as a flavoring agent in curries (particularly vegetable curries and dal). It is fried in oil with onions, garlic, and green chilies, then added to the curry. Shidal is not typically consumed raw; the cooking kills live microbes, but the fermentation enhances flavor and preserves the fish for extended periods. Shidal is an acquired taste, even among Bengalis, and is more popular in rural areas and among the older generation. Improperly fermented shidal can develop high levels of histamine, which can cause scombroid poisoning. Only shidal from trusted traditional sources should be consumed. Pregnant women should avoid shidal due to the theoretical risk of biogenic amines.


Chapa Shidal (Pressed fermented fish)


Chapa shidal is a variation of shidal where the fermented fish paste is pressed into flat cakes or blocks (similar to the Thai "pla ra" or Lao "padek"). The fish are fermented in the same manner as shidal, but after fermentation, the paste is spread on banana leaves, pressed into flat cakes, and sun dried briefly. Chapa shidal has a drier, crumbly texture and a slightly milder aroma. It is used in the same way as shidal, crumbled into curries or fried as a condiment. The sun drying step introduces additional microbial exposure but also reduces moisture, extending shelf life.


Sukto Maachh (Fermented dried fish)


While not strictly a fermented product in the same sense as shidal, Bengal has a tradition of using "sukto maachh" (dried salted fish) that undergoes a mild fermentation during the drying process. Small fish (such as anchovies or small prawns) are mixed with salt and sun dried. During the drying period (3 to 7 days), halotolerant LAB ferment the fish, producing a characteristic sour, fishy aroma. The dried fish are then stored and used as a flavoring agent in curries or fried and eaten as a side dish. This product is similar to the "bombay duck" (loitta sukto) of West Bengal. The drying and cooking processes kill most live microbes, but the flavor development is dependent on fermentation.

In traditional Bengali cuisine, a small piece of shidal or sukto maachh is often added to vegetable curries (particularly potato and pumpkin curries) and dal (lentil soup) to provide a deep, umami flavor. This practice is analogous to using fish sauce (nam pla) in Southeast Asian cuisine. Part 2: Fermented Grain and Legume Batters


West Bengal has a rich tradition of fermented batters, similar to South India but with distinct products. Bati (Fermented rice and lentil batter for dumplings)

Bhapa Pitha (Steamed fermented rice cake)


Bhapa pitha is a traditional Bengali rice cake, often prepared during the harvest festival of Sankranti (Poush Sankranti in January). While many pitha are made from unfermented rice flour, the "bhapa pitha" (steamed pitha) is often made from a fermented batter. Rice flour (or freshly ground soaked rice) is mixed with water, salt, and sometimes a small amount of curd (doi) to initiate fermentation. The batter is left to ferment for 4 to 6 hours. The fermented batter is then poured into small bowls (often made of sal or banana leaves) and steamed. The result is a soft, spongy, slightly sour rice cake. Bhapa pitha is typically served with jaggery (gur) syrup or with grated coconut and jaggery. The steaming kills live microbes. Bhapa pitha is a winter delicacy in Bengal.


Pithe (Fermented rice and coconut dumplings)


Pithe is a broad category of Bengali rice cakes and dumplings. A fermented version, similar to the Tamil "kozhukattai," is made by fermenting rice flour batter overnight. The fermented batter is then shaped into small dumplings, filled with a sweet filling of jaggery and coconut (narkel gur), and steamed. The fermentation adds a subtle sourness that balances the sweetness of the jaggery. The steaming kills live microbes.


Dhakaiya Dosa (Dhakai style dosa)


Dhakaiya dosa is a thicker, softer dosa variant prepared by the Bengali Hindu and Muslim communities of Dhaka (now Bangladesh, but the tradition is preserved in West Bengal among migrant communities). The batter has a higher proportion of black gram to rice (similar to idli batter) and is fermented overnight. The dosa is not spread thin like South Indian dosa; instead, the batter is ladled onto the griddle and allowed to cook without spreading, resulting in a thick, spongy, pancake like dosa. Part 3: Fermented Rice Based Porridges and Gruels


West Bengal has a strong tradition of fermented rice water and rice porridges, similar to the South Indian "ambali" or "seepu," but with distinct names and variations. These are genuine probiotic beverages because they are consumed raw, without cooking.


Panta Bhat (Fermented rice water)


Panta bhat is arguably the most iconic fermented food of West Bengal. It is the Bengali version of fermented rice water, equivalent to Tamil "seepu," Telugu "ambali," and Assamese "poita bhat." Cooked rice (preferably leftover rice) is mixed with water and left to ferment overnight (8 to 12 hours) in an earthen pot. The mixture is allowed to sour naturally, driven by lactic acid bacteria present on the rice and in the pot. The resulting liquid (the water portion) is called "panta jol," and the softened rice grains are "panta bhat." The dish is sour, slightly effervescent, and has a characteristic fermented aroma. Panta bhat is consumed as a breakfast or lunch dish, particularly during the summer months. It is typically served with salt, green chilies, raw onions, and fried or mashed potatoes (aloo bhorta). It is also traditionally consumed during the Bengali New Year (Pohela Boishakh in mid April) as part of a festive meal. Panta bhat is considered a digestive aid and a cooling food. It is a genuine probiotic food when consumed fresh (within 24 hours). The LAB content includes Lactobacillus, Leuconostoc, and Pediococcus species. Panta bhat is particularly popular in rural Bengal and among the working class in urban areas. It is valued for its low cost, its ability to prevent dehydration (the water content is high), and its sustained energy release. If panta bhat develops a putrid smell (not just sour), visible mold, a thick slimy consistency, or a fizzy/alcoholic smell (indicating yeast dominance), it should be discarded. Panta bhat should be consumed within 24 hours.


Panta Jhol (Fermented rice water as beverage)


The liquid portion of panta bhat (panta jol) is sometimes consumed separately as a beverage. It is cloudy, sour, and effervescent. It is drunk plain or with a pinch of salt. It is considered a digestive aid and is given to individuals recovering from diarrhea or gastrointestinal infections. It is a genuine probiotic beverage.


Jhola Bhat (Thin fermented rice gruel)


Jhola bhat is a thinner, more watery version of panta bhat. Cooked rice is mixed with a larger quantity of water and fermented overnight. The resulting gruel is thin and sour. It is consumed as a beverage or as a light meal for individuals who are ill or have poor appetite. It is a genuine probiotic food.

Part 4: Fermented Dairy Products


West Bengal has a strong dairy tradition, particularly in the districts of Nadia (famous for its sweets), Murshidabad, and Birbhum. Fermented dairy products are consumed daily, and Bengal is famous for its fermented sweets (covered in Part 7).


Doi (Curd or Yogurt)


Doi is the Bengali name for fermented milk curd, equivalent to Tamil thayir, Telugu perugu, and Kannada mosaru. It is prepared by boiling fresh cow or water buffalo milk, cooling to lukewarm (40 to 45 degrees Celsius), and inoculating with a starter culture from a previous batch of doi. The fermentation is driven by Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus. Traditional Bengali doi often has a distinct, slightly viscous, almost sticky texture, which is achieved by using a specific microbial consortium and by boiling the milk until it reduces slightly (which concentrates the milk solids). Doi is consumed daily in Bengali households. It is served plain, as "doi bhat" (curd rice), or as a side dish with meals. It is also used as a base for "misti doi" (sweet curd, covered in Part 7). Doi is a genuine probiotic food when fresh. Bengali doi is often less sour than South Indian curd, as it is traditionally consumed sooner (within 12 to 24 hours of setting).


Ghol (Spiced buttermilk)


Ghol is the Bengali name for spiced buttermilk, equivalent to Tamil neer mor, Telugu majjiga, and Kannada majjige. It is prepared by churning fresh doi to separate the butter, then diluting the remaining liquid with water. Ghol is seasoned with salt, black salt (kala namak), roasted cumin powder, ginger, green chilies, and sometimes mint or coriander leaves. It is consumed as a refreshing beverage, particularly during the hot summer months. In Bengal, ghol is often served as an accompaniment to "luchi" (deep fried flatbread) and "aloor dum" (spicy potato curry) or as a digestive drink after a heavy meal. Ghol contains live lactic acid bacteria. It is a genuine probiotic beverage.


Chhaka (Curd whey)


Chhaka is the Bengali name for the whey that separates from curd (doi). It is the equivalent of Tamil "thanni." The translucent, yellowish liquid is consumed as a beverage, sometimes mixed with salt and black salt. Chhaka is sour and contains soluble proteins, B vitamins, and live LAB. It is considered a digestive aid. Chhaka is also used as a natural souring agent in some traditional preparations. Its consumption has declined with urbanization.


Takar (Curd water from churning)


Takar is another term for the liquid obtained after churning curd to separate butter. It is similar to ghol but may be less diluted. It is consumed as a beverage, often with the addition of roasted cumin powder and black salt. It is a genuine probiotic beverage.

Part 5: Fermented Pickles and Condiments


West Bengal has a rich tradition of fermented pickles (achar), but the pickling style differs from South India. Bengali pickles often use mustard oil as the primary preservative and flavoring agent, along with salt, and they incorporate a wider variety of fruits and vegetables. The fermentation is often shorter and relies more on oil and spices than on high salt concentrations.


Mango Pickle (Kacha Aamer Achar)


Bengali raw mango pickle is made from raw, unripe mangoes (preferably the variety known as "gota mango" or "aam panno mango"). The mangoes are cut into cubes (or left whole with slits) and mixed with salt, turmeric powder, chili powder, fenugreek powder (methi), black mustard seeds (or mustard paste), and a generous amount of mustard oil. The mixture is packed into a ceramic or glass jar and left to ferment in the sun for 7 to 10 days. The fermentation is driven by halotolerant LAB (Lactobacillus plantarum, Tetragenococcus halophilus) and also by the enzymes present in the mustard seeds (which have antimicrobial properties). The mustard oil inhibits spoilage organisms while allowing LAB to grow. The resulting pickle is spicy, sour, salty, and intensely mustardy. Unlike the very high salt avakaya of Andhra (15 to 20 percent), Bengali mango pickle has a lower salt content (8 to 12 percent) and relies more on mustard oil for preservation. It is served as a condiment with rice, luchi, or paratha. The pickle contains live LAB when fresh, but the high oil content makes it less hospitable for microbes over time.


Lemon Pickle (Lebur Achar)


Bengali lemon pickle is made from whole or quartered lemons (lebu). The lemons are mixed with salt, turmeric powder, chili powder, black mustard seeds, and mustard oil. The mixture is left to ferment in the sun for 10 to 15 days. The fermentation softens the lemon rind and produces a sour, salty, spicy condiment. Bengali lemon pickle often includes whole green chilies and ginger pieces. It is a staple condiment in Bengali households. The primary fermenting organisms are Tetragenococcus halophilus and Lactobacillus species.


Olive Pickle (Enchor or Jalpai Achar)


Jalpai (Olive, Elaeocarpus serratus) is a sour, tangy fruit that grows in West Bengal (particularly in the Sundarbans region). Jalpai pickle is made by scoring the whole fruits, mixing with salt, chili powder, mustard oil, and sometimes black mustard seeds, and leaving to ferment for 10 to 15 days. The fermentation reduces the astringency and enhances the sourness. Jalpai pickle is a regional specialty of the Sundarbans and coastal Bengal.


Garlic Pickle (Rosun Achar)


Bengali garlic pickle is made from whole cloves of garlic (rosun) mixed with salt, chili powder, black mustard seeds, and mustard oil. The mixture is left to ferment for 7 to 10 days. The fermentation softens the garlic and reduces its pungency, producing a spicy, sour, mild garlic flavored condiment. Garlic pickle is considered a digestive aid and is also used as a home remedy for colds and coughs. It contains live LAB.


Green Chili Pickle (Kacha Lanka Achar)


Whole green chilies (kacha lanka) are mixed with salt, lemon juice or tamarind paste, and mustard oil, and left to ferment for 5 to 7 days. The chilies soften and become intensely spicy and sour. Green chili pickle is served in tiny quantities as a condiment. It is particularly popular in the winter months.


Vegetable Mixed Pickle (Togari Achar)


Bengali households prepare mixed vegetable pickles using a combination of raw mango, lemon, green chilies, garlic, ginger, carrot pieces, cauliflower florets, and sometimes jackfruit seeds. The vegetables are mixed with salt, turmeric, chili powder, fenugreek, mustard seeds, and mustard oil, and left to ferment for 10 to 15 days. The result is a complex, spicy, sour pickle.


Chholar Dal Achar (Fermented lentil pickle)


A unique Bengali pickle is made from chholar dal (split Bengal gram, Cicer arietinum). The dal is soaked briefly, then mixed with salt, chili powder, asafoetida, and mustard oil, and left to ferment for 3 to 5 days. The resulting pickle is salty, spicy, and has a crunchy texture. Chholar dal achar is served as a condiment with rice. This product is relatively rare.

Part 6: Fermented Vegetables


Bengal has a tradition of fermenting leafy vegetables, similar to the Korean kimchi or the German sauerkraut, though less well documented.


Saag Achar (Fermented leafy vegetable pickle)


Leafy greens (such as mustard greens, radish leaves, and spinach) are fermented into a pickle like condiment. The greens are washed, chopped, mixed with salt, chili powder, mustard seeds, and mustard oil, and packed tightly into a jar. The mixture is left to ferment for 5 to 7 days. The fermentation is driven by LAB present on the leaves. The resulting saag achar is sour, salty, and spicy. It is served as a condiment with rice. This product is particularly popular in the winter months when leafy greens are abundant. It is similar to the fermented mustard greens of Northeast India (assam "bai" or "gundruk").


Fermented Bamboo Shoots (Bansh Korol)


In the northern districts of West Bengal (Darjeeling, Kalimpong), which have a significant Nepali and Tibetan population, fermented bamboo shoots are consumed. This tradition is similar to the Karnataka Kodava practice. Bamboo shoots are sliced, mixed with salt (5 to 10 percent), and fermented for 7 to 15 days in an earthen pot or bamboo vessel. The resulting product is sour, pungent, and slightly cheesy. It is used in curries or as a condiment. The safety note for fermented bamboo shoots from the Karnataka guide applies. This product is more common in the Darjeeling hills and is not typical of plains Bengali cuisine.


Fermented Radish (Mula Achar)


Radish pieces (mula) are fermented with salt, chili powder, and mustard oil to produce a crunchy, sour, spicy pickle. The radish is cut into sticks or slices, mixed with the spices, and left to ferment for 5 to 7 days. The fermentation softens the radish slightly and reduces its sharp pungency. It is served as a condiment.

Part 7: Fermented Sweets


West Bengal is famous throughout India for its sweets (mishti), and a surprising number of these involve fermentation. The most famous is "misti doi" (sweet curd), but others include fermented rice based sweets.


Misti Doi (Sweet curd)


Misti doi is the iconic fermented sweet of West Bengal. It is made by boiling milk (preferably water buffalo milk, which has a higher fat content) until it reduces and thickens slightly. Jaggery (gur, preferably date palm jaggery or "nolen gur" during the winter months) or sugar is added to the warm milk. The sweetened, warm milk is cooled to lukewarm (40 to 45 degrees Celsius) and inoculated with a starter culture (doi). The mixture is then poured into small earthen pots (called "ghot" or "kullar") and left to ferment undisturbed for 6 to 8 hours. The earthen pot is porous and absorbs excess moisture, resulting in a thick, creamy, slightly grainy textured curd. The fermentation is driven by the same LAB as plain doi (Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus), but the addition of sugar or jaggery alters the fermentation dynamics. The jaggery also provides a characteristic caramel like, earthy sweetness. Misti doi is a genuine probiotic food when fresh. However, the high sugar content (approximately 20 to 30 percent) means that the probiotic benefits are limited by the quantity that can be consumed. Misti doi is served as a dessert, often at the end of a meal. It is particularly associated with the districts of Nadia (Krishnanagar is famous for its mishti doi) and Murshidabad. Unlike plain curd, mishti doi is typically consumed within 24 to 48 hours.


Nolen Gur Doi (Winter date palm jaggery sweet curd)


Nolen gur doi is a seasonal variation of mishti doi made during the winter months (December to February) when date palm jaggery (nolen gur) is harvested. The jaggery has a distinctive, smoky, caramel like flavor that is highly prized. Nolen gur doi is considered a delicacy and is significantly more expensive than standard mishti doi. The fermentation process is identical.


Patishapta (Fermented rice crepe with sweet filling)


Patishapta is a traditional Bengali sweet pancake (pitha) prepared during Sankranti. The batter is made from rice flour, semolina (sooji), and sometimes maida (all purpose flour), mixed with water and a small amount of curd to initiate fermentation. The batter is left to ferment for 2 to 4 hours. The fermented batter is then poured onto a hot griddle and spread into a thin crepe. A sweet filling made of grated coconut and jaggery (or kheer, reduced milk solids) is placed on the crepe, which is then rolled up. The cooking kills live microbes. The fermentation contributes to a slightly sour taste that balances the sweetness of the filling.


Bhapa Sandesh (Steamed fermented cottage cheese sweet)


Sandesh is a Bengali sweet made from chhana (fresh, unaged cottage cheese, similar to paneer but softer). A fermented version, "bhapa sandesh," involves mixing chhana with sugar and sometimes curd (doi), then allowing the mixture to ferment for 2 to 4 hours before steaming. The fermentation is driven by LAB from the curd. The steamed sandesh has a slightly sour, tangy flavor and a light, airy texture. It is less common than standard sandesh. Part 8: Fermented Beverages


West Bengal's fermented beverage tradition includes both alcoholic and non alcoholic products.


Toddy (Tadi or Tal er Ras)


Toddy (tadi) is produced from the sap of the date palm (Phoenix sylvestris) and the palmyra palm (Borassus flabellifer) in West Bengal, particularly in the districts of East Midnapore, West Midnapore, Bankura, Purulia, and the Sundarbans. The sap is collected in earthen pots and ferments naturally within a few hours. Fresh toddy (collected in the morning, consumed by midday) has a low alcohol content (2 to 4 percent) and is sweet, effervescent, and slightly sour. Older toddy has a higher alcohol content (5 to 8 percent). The microbial community includes Saccharomyces cerevisiae and various LAB. Toddy is consumed in licensed shops. Pregnant women should avoid toddy. Date palm toddy (tal er ras) is particularly popular in Bengal during the winter months when the sap is sweeter.


Palm Jaggery Ferment (Fermented gur beverage)


A unique fermented beverage is made by dissolving date palm jaggery (nolen gur) in water and allowing the mixture to ferment spontaneously for 12 to 24 hours. The natural yeasts present on the jaggery ferment the sugars, producing a mildly alcoholic, effervescent, sour sweet beverage. This is similar to the fermented panakam of Tamil Nadu and the gurijala of Telangana. The alcohol content is typically below 3 percent. Pregnant women should avoid it. This beverage is now rare.


Fermented Rice Beer (Bengali version)


In the tribal communities of West Bengal (Santhals, Mundas, Oraons) in the districts of Purulia, Bankura, and West Midnapore, a traditional fermented rice beer called "handia" or "pachwai" is prepared. Rice is cooked, cooled, and mixed with a starter culture (called "ranu" or "bakhar") made from a mixture of powdered rice, root bark, and spices. The mixture is left to ferment for 3 to 7 days. The resulting beer is milky white, mildly alcoholic (5 to 10 percent), sour, and slightly effervescent. Handia is consumed during festivals, social gatherings, and as a daily refreshment. The starter culture contains a complex consortium of yeasts (Saccharomyces cerevisiae, Candida spp.) and LAB. This product is similar to the "handia" of Jharkhand and "judima" of Assam. Pregnant women should avoid handia. This product is rarely consumed outside tribal communities and is not typical of mainstream Bengali cuisine.


Fermented Rice Gruel (Notun Panta)


A sweeter, less sour version of panta bhat, called "notun panta" (new panta), is sometimes consumed. Freshly cooked rice is mixed with water and left to ferment for only 4 to 6 hours, before it becomes fully sour. The resulting gruel is mildly sour and slightly sweet. It is consumed as a beverage. It is a genuine probiotic food.

Part 9: Starter Cultures and Fermentation Vessels


West Bengal's fermentation vessels and starter cultures have unique elements, particularly the use of earthen pots for sweets and the handia starter cakes.


Earthen Pots (Matka or Ghat)


Traditional Bengali households ferment doi (curd) and prepare mishti doi in unglazed earthen pots called "matka" or "ghat." The porous inner surface retains a biofilm of LAB from previous batches. For mishti doi specifically, the earthen pot is essential for achieving the characteristic thick, creamy texture; the pot absorbs excess moisture, concentrating the curd. Pots used for decades are highly valued. The use of earthen pots has declined with urbanization, but mishti doi sold in traditional sweet shops is still often set in individual earthen cups (kullar).


Handia Starter (Ranu or Bakhar)


The traditional fermented rice beer (handia) of the tribal communities requires a starter culture called "ranu" or "bakhar." This is a dried cake made from a mixture of rice flour, root bark (from plants such as Plumbago zeylanica, Clerodendrum viscosum, and other local species), ginger, garlic, and chili powder. The mixture is formed into small cakes and sun dried. When added to cooked rice, the ranu provides a complex consortium of yeasts (Saccharomyces cerevisiae, Candida glabrata) and LAB (Lactobacillus plantarum, Pediococcus species) that ferment the rice into beer. The production of ranu is a specialized traditional knowledge passed down within families. This starter culture is similar to the "marcha" or "bubud" used in the Himalayas for making "chhang" (fermented millet beer).


Sal and Banana Leaves


Traditional Bengali fermentations, particularly for pitha and bati, use sal leaves (Shorea robusta) or banana leaves as steaming vessels. The leaves are shaped into small cups or cones, and the fermented batter is poured into them for steaming. The leaves impart a mild, earthy aroma to the product. The leaves may also contribute surface microbes to the fermentation process, though this has not been studied.


Clay Seals for Shidal


For shidal (fermented fish paste), the earthen pot is sealed with clay to create an anaerobic environment for the long fermentation (6 months to 1 year). The clay seal prevents the entry of oxygen and spoilage organisms. The breaking of the seal is a ceremonial occasion in some households.

Final Safety and Consumption Note


While traditional fermented foods of West Bengal offer significant nutritional and probiotic benefits, several safety considerations specific to the state's unique products should be noted.


For fermented fish (shidal, chapa shidal, sukto maachh): These products require extreme caution. Improperly fermented fish can accumulate high levels of histamine and other biogenic amines, causing scombroid poisoning (symptoms include flushing, headache, palpitations, nausea, and diarrhea). Only shidal from trusted traditional sources should be consumed. Shidal with a putrid, ammoniacal smell (not just strongly fishy), a slimy texture, or visible mold should be discarded. Pregnant women should avoid shidal entirely due to the theoretical risk of biogenic amines and the high salt content. Immunocompromised individuals should avoid shidal. Even for healthy individuals, shidal should be consumed in very small quantities (less than 5 grams per meal) and should always be cooked thoroughly (fried in oil) before consumption. The cooking process does not destroy histamine, so the risk remains.


For grain and legume batters (bati, bhapa pitha, pithe, dhakaiya dosa): These products are steamed or cooked, which kills all live microorganisms. They are safe for immunocompromised individuals, pregnant women, and infants. Batter that has fermented for too long (more than 24 hours) may develop off flavors or visible mold and should be discarded.


For fermented rice porridges and gruels (panta bhat, panta jol, jhola bhat, notun panta): These are genuine probiotic foods consumed raw, without cooking. They are generally safe for healthy individuals. However, they must be prepared with clean water and in clean vessels. They should be consumed within 24 hours of preparation. Any porridge or gruel with a putrid smell (not just sour), visible mold, a thick slimy consistency, or a fizzy/alcoholic smell (indicating yeast dominance) should be discarded. Pregnant women can consume panta bhat as it is non alcoholic (alcohol content below 0.5 percent) but should ensure hygienic preparation. Panta bhat is a traditional summer food and is considered safe.


For dairy products (doi, ghol, chhaka, takar, mishti doi, nolen gur doi): These are genuine probiotic foods consumed live. They are generally safe for healthy individuals. For pregnant women, plain doi and ghol are safe and recommended. Misti doi has a high sugar content; pregnant women with gestational diabetes should limit consumption. For immunocompromised individuals, live dairy ferments are generally safe, but consultation with a physician is advised. Doi that has been stored for more than 5 to 7 days or shows signs of mold should be discarded. Misti doi should be consumed within 48 hours.


For fermented pickles (kacha aamer achar, lebur achar, jalpai achar, rosun achar, kacha lanka achar, saag achar, mula achar): These products have a moderate to high salt content (8 to 12 percent) and high mustard oil content. Individuals with hypertension, congestive heart failure, or chronic kidney disease should consume these pickles in very small quantities. The mustard oil may cause gastrointestinal irritation in some individuals. Pregnant women can consume these pickles in small amounts. Pickles that develop a slimy texture, unusual colors, or a putrid, rotten smell should be discarded. Mold growth on the surface warrants discarding the entire batch. Saag achar (fermented leafy greens) is more prone to spoilage than fruit pickles; it should be consumed within 2 to 3 months and refrigerated after opening.


For fermented vegetables (bansh korol/fermented bamboo shoots in northern Bengal): The safety note from the Karnataka guide applies. Only from trusted sources. Pregnant women should avoid raw fermented bamboo shoots. Any shoots with an ammoniacal smell, putrid smell, slimy texture, or visible mold should be discarded.


For fermented sweets (patishapta, bhapa sandesh): These are cooked or steamed, which kills live microbes. They are safe for everyone. Bhapa sandesh (if the fermentation is done before steaming) is not probiotic but is safe. Misti doi (which is not cooked after fermentation) is probiotic but has high sugar content.


For fermented beverages (tadi/toddy, fermented gur beverage, handia, fermented rice gruel): For tadi (toddy), only from licensed shops. Pregnant women should avoid tadi entirely. For the fermented gur beverage (jaggery ferment), the fermentation is uncontrolled. First time consumers should start with a very small amount (30 to 50 milliliters) to assess tolerance. Pregnant women should avoid it due to the alcohol content. For handia (tribal rice beer), the alcohol content can vary; pregnant women should avoid it entirely. For fermented rice gruel (notun panta, panta jol), which is non alcoholic, the safety note for panta bhat applies.


For individuals on monoamine oxidase inhibitor (MAOI) medications: Aged products such as long fermented shidal (stored for more than 6 months) and aged pickles may contain elevated levels of tyramine. These individuals should avoid aged fermented foods or consult their physician. Freshly fermented products (doi, ghol, fresh panta bhat) have lower tyramine levels and are generally safe.


For general consumers: Start with small quantities of any new fermented food to assess individual tolerance. Shidal and other fermented fish products should be approached with particular caution. Pregnant women, immunocompromised individuals, and infants under one year should consult a physician before adding significant quantities of live fermented foods to their diet. For cooked fermented products (bati, bhapa pitha, pithe, patishapta, bhapa sandesh), no consultation is needed as these are safe for everyone.


Note on Commercial Products: Many commercially available pickles and curd products are pasteurized or contain preservatives. Traditional, homemade, or fresh products are required for live probiotics. Misti doi sold in earthen cups (kullar) at traditional sweet shops (mishti shops) is more likely to contain live microbes than mass produced, packaged mishti doi. Shidal is almost never commercially available in a standardized form; traditional homemade versions are the only source.


Note on Distilled Beverages: Distilled liquors are not included. Only the non distilled, live fermented beverages (fresh panta jol, notun panta, fresh tadi, fresh handia) retain their microbial content, and even these must be consumed fresh.
