A Comprehensive Guide to Probiotic and Fermented Foods of Rajasthan

Rajasthan, the largest state in India by area, is located in the northwestern part of the country. The state is dominated by the Thar Desert (also known as the Great Indian Desert) in the west and northwest, while the eastern and southeastern regions (Hadoti, Mewar) are semi arid with more vegetation and higher rainfall. The climate is extreme and is best described as hot and arid (classification: BWh for the desert regions, BSh for the semi arid regions). Summers (April to June) are brutally hot, with daytime temperatures frequently exceeding 45 degrees Celsius. Winters (December to February) are cold, with nighttime temperatures dropping to near freezing (0 to 5 degrees Celsius) in some areas. Annual rainfall is very low, ranging from less than 100 millimeters in the Thar Desert to 400 to 500 millimeters in the southeastern districts (Kota, Bundi, Jhalawar, Udaipur). Humidity is extremely low for most of the year, often below 30 percent during the dry season.


This harsh, arid climate has profoundly shaped Rajasthan's fermentation traditions. Unlike the humid coastal regions of South India, where spontaneous fermentation occurs rapidly due to high airborne microbial loads, Rajasthan's dry climate means that fermentation cannot rely on environmental microbes. Instead, traditional practices use specific starter cultures (leftover batter, buttermilk, yogurt) and fermentation vessels are often buried underground or kept in cool, dark cellars (tahkhana) to maintain stable temperatures. The extreme temperature variations between day and night (often a 15 to 20 degree Celsius difference) also influence fermentation dynamics; traditional households time their fermentation to begin in the evening and complete by morning, or vice versa.


The state is home to the Rajasthani people, with a culinary heritage shaped by the Rajput, Marwari, Jain, Bishnoi, Meena, Bhil, and other tribal and pastoral communities (including the Rabari, Raika, and Gujjar). The cuisine is predominantly vegetarian, with significant populations of Jains (who avoid root vegetables, garlic, onions, and certain ferments) and Vaishnavas. Fermentation is used not only for flavor and nutrition but also as a critical preservation technique in a climate where fresh food spoils rapidly and water is scarce. Fermented foods are also valued for their ability to provide hydration (through liquids like chaas) and electrolytes (through salted ferments).


Scientific studies have isolated several probiotic lactic acid bacteria from Rajasthan's fermented foods, including various species of Lactobacillus, Lactococcus, Leuconostoc, Pediococcus, and Enterococcus. Rajasthan is particularly known for its fermented milk products (chaas, rabdi, kadhi, mattha, ghee from fermented butter) and its unique fermented grain and pulse products (bajra ki roti fermented, panchmel dal fermented).

Part 1: Fermented Grain, Millet, and Pulse Products


Rajasthan's staple grains are millets: pearl millet (bajra, Pennisetum glaucum) in the western and northwestern desert regions, and finger millet (ragi, mandia) and sorghum (jowar) in the southeastern regions. Wheat is also consumed, but millets dominate. Fermentation of these grains is essential for improving digestibility (millet proteins can be hard to digest), reducing antinutrients (phytic acid, tannins), and enhancing mineral bioavailability (iron, zinc, calcium). The arid climate means that fermentation is almost always initiated with a starter culture (such as buttermilk or leftover fermented batter) rather than relying on spontaneous fermentation.


Bajre Ki Roti (Fermented pearl millet flatbread)


Bajre ki roti is the staple bread of desert Rajasthan. While often made from unfermented dough, a fermented version exists in traditional households and is considered superior in taste and digestibility. Pearl millet flour (bajra) is mixed with warm water, salt, and a small amount of sour buttermilk (chaas) or yogurt (dahi). The dough is left to ferment for 6 to 8 hours (or overnight) in a covered earthen pot. In the extreme summer heat (40 to 45 degrees Celsius), fermentation completes in 4 to 5 hours. In winter (5 to 15 degrees Celsius), the dough is placed near the hearth (chulha) or wrapped in cloth and kept in a warm spot. The fermentation is driven by LAB from the buttermilk, primarily Lactobacillus plantarum, Lactococcus lactis, and Leuconostoc species. The fermentation reduces the phytic acid content of bajra (which is very high), significantly improving the bioavailability of iron and zinc. It also breaks down complex proteins, making the roti softer and more digestible, reducing the grittiness that unfermented bajra roti often has. After fermentation, the dough is rolled into flatbreads and cooked on a hot griddle (tawa) over an open flame. The cooking kills all live microbes. Fermented bajre ki roti is typically served with ghee, garlic chutney (lehsun ki chutney), and butter milk (chaas). It is a winter staple but is consumed year round.


Rabdi (Fermented millet porridge, not the sweet dessert)


Note: This is not the sweet, condensed milk dessert of the same name found in North India. In Rajasthan, "rabdi" (also called "rabri" or "raab" in some regions) refers to a savory, fermented millet porridge. It is made from pearl millet flour (bajra) or a mixture of millet flours, mixed with water, salt, and sour buttermilk (chaas). The mixture is left to ferment for 6 to 12 hours. After fermentation, the porridge is cooked (or sometimes consumed raw, depending on the community and season). In the winter months, the fermented rabdi is simmered with buttermilk, herbs, and spices (cumin, coriander, ginger, green chilies) to make a thick, warm, sour, savory porridge. In the summer, it is consumed raw or lightly cooked and served at room temperature. Rabdi is a staple food in rural Rajasthan, particularly among the pastoral communities (Rabari, Raika) and agricultural laborers. It provides sustained energy, hydration, and probiotics (if consumed raw or minimally heated). When consumed raw (uncooked), rabdi is a genuine probiotic food rich in live LAB. However, many households prefer to cook it, which kills the microbes but retains the enhanced nutrition. Rabdi is often eaten with chopped onions, green chilies, and a drizzle of ghee. It is considered a complete meal and is often the only food consumed during long working days in the fields.


Fermented Dal (Vaal or Moth bean ferment)


Rajasthan has a unique tradition of fermenting dals (pulses) before cooking. Vaal (hyacinth bean, Lablab purpureus) and moth bean (Vigna aconitifolia, called "math" or "moth" in Rajasthan) are native to the arid region and are extremely drought tolerant. These beans are hard to digest and contain high levels of flatulence causing oligosaccharides and antinutrients. Traditional preparation involves soaking the beans overnight, then grinding them into a coarse paste with water, salt, and sour buttermilk. The paste is left to ferment for 6 to 8 hours. The fermentation is driven by LAB, primarily Lactobacillus plantarum and Pediococcus species, which break down the oligosaccharides and reduce phytic acid. After fermentation, the paste is cooked into a thick dal (curry) or used to make fritters (vadas). The cooking kills live microbes. Fermented moth bean dal (moth dal) is a staple in the Marwar region (Jodhpur, Nagaur, Bikaner). It is typically served with bajre ki roti and chaas.


Panchmel Dal (Fermented five pulse blend)


Panchmel dal (also called panchkuta or panchratna dal in some regions) is a traditional Rajasthani dal made from a blend of five pulses: moth bean (math), green gram (moong), chickpea (chana), pigeon pea (tuvar), and black gram (urad). The traditional preparation involves soaking the mixed dals overnight, then fermenting the ground paste with sour buttermilk for 4 to 6 hours before cooking. The fermentation improves the digestibility of the complex pulse mixture and reduces the gas producing compounds. The cooked dal is then tempered with ghee, cumin, asafoetida, dried red chilies, and garlic (in non Jain households). Panchmel dal is a staple of the Rajasthani thali. The fermentation (which occurs before cooking) enhances nutrient bioavailability, but the cooking kills live microbes.


Gatte (Fermented gram flour dumplings)


Gatte are traditional Rajasthani dumplings made from chickpea flour (besan). The basic version is not fermented, but a fermented version called "khatta gatta" or "dahi gatta" exists. Chickpea flour is mixed with sour yogurt (dahi), spices, and a small amount of oil to form a stiff dough. The dough is left to ferment for 4 to 6 hours. After fermentation, the dough is rolled into cylindrical logs, boiled in water, and then sliced into dumplings. The dumplings are then cooked in a yogurt based curry (dahi ki kadhi). The fermentation makes the gatte softer and more digestible, and adds a characteristic tangy flavor. The boiling and subsequent cooking kill live microbes.


Kachaudi (Fermented deep fried bread)


Kachaudi (or kachori) is a popular Rajasthani snack. While most versions use unfermented dough, the traditional Rajasthani kachaudi uses a fermented dough. All purpose flour (maida) or whole wheat flour is mixed with sour yogurt (dahi), salt, and a small amount of oil or ghee. The dough is left to ferment for 4 to 6 hours. After fermentation, the dough is rolled into small balls, filled with a spicy lentil filling (usually urad dal or moong dal), and deep fried. The fermentation makes the outer crust lighter, flakier, and more digestible. The deep frying kills live microbes. Kachaudi is served with sweet and sour tamarind chutney (khatti meethi chutney) and green chutney. The Rajasthani kachaudi (particularly from Jodhpur and Jaipur) is famous across India.


Daal Baati (Fermented dal component)


Daal baati is the iconic Rajasthani dish consisting of hard, baked wheat dumplings (baati) served with dal (lentil curry). While the baati is not fermented (it is made from unfermented whole wheat flour), the dal component often undergoes fermentation before cooking. The dals (typically tuvar dal, chana dal, moong dal) are soaked, ground into a coarse paste with water, salt, and sour buttermilk, and left to ferment for 4 to 6 hours. The fermented dal is then cooked with spices, ghee, and herbs. The fermentation enhances the digestibility of the dals and adds a tangy flavor that complements the rich, buttery baati. The cooking kills live microbes. Daal baati is traditionally cooked in a chulha (wood fire) and is served with ghee, churma (sweetened crushed wheat), and chutneys.

Part 2: Fermented Dairy Products


Rajasthan has an exceptionally strong dairy tradition, rivaling Gujarat. The state is one of India's largest milk producers, with indigenous cattle breeds (Rathi, Tharparkar, Kankrej) and water buffalo. The pastoral communities (Rabari, Raika, Gujjar) have traditionally lived entirely on milk and milk products. Fermented dairy is consumed daily in every household, and the arid climate makes fresh milk preservation through fermentation essential.


Chaas (Spiced buttermilk)


Chaas (also called "chhachh" or "mattha") is the most consumed fermented beverage in Rajasthan, drunk daily, often multiple times per day. In the extreme summer heat of the desert (45 degrees Celsius plus), chaas is essential for preventing dehydration and heat stroke. It is prepared by churning fresh curd (dahi) to separate the butter, then diluting the buttermilk with water (typically 1:3 or even 1:4 ratio of curd to water, making it very thin). The chaas is seasoned with salt, roasted cumin powder (jeera powder), black salt (kala namak), asafoetida (hing), and sometimes dried mint (pudina) or coriander leaves. The Rajasthani chaas is thinner, saltier, and more heavily spiced with cumin than the Gujarati version. It contains live lactic acid bacteria, primarily Lactococcus lactis, Lactobacillus delbrueckii subsp. bulgaricus, and Leuconostoc species. Chaas is consumed with meals, especially lunch, and is also drunk mid morning and late afternoon. In desert villages, chaas is often stored in earthen pots (matka), which keep it cool through evaporative cooling. The whey proteins and electrolytes in chaas make it an excellent rehydration drink, far superior to plain water in the desert heat.


Mattha (Sweet or lightly spiced buttermilk)


Mattha is a variation of chaas, similar to the Gujarati version. It is made from churned curd diluted with water, but mattha is typically sweeter and less salty. A small amount of sugar or jaggery is added, along with roasted cumin powder and a pinch of black salt. Some variations include crushed rose petals (gulab) or cardamom powder (elaichi). Mattha is often consumed by children, the elderly, and those who find the strong salty chaas too intense. Like chaas, mattha contains live probiotics.


Dahi (Curd or Yogurt)


Dahi is prepared by boiling fresh cow or water buffalo milk, cooling to lukewarm (40 to 45 degrees Celsius), and inoculating with a starter culture from a previous batch of dahi (back slopping). The fermentation is driven by Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus. In Rajasthan's extreme temperatures, dahi sets rapidly in summer (3 to 4 hours), often becoming too sour if left overnight. In winter (nighttime temperatures near freezing), the inoculated milk is placed in a warm spot (near the hearth, inside a quilts wrapped pot) and may take 12 to 16 hours to set. Traditional households use earthen pots (matka) for setting dahi. The porous clay allows evaporative cooling in summer (preventing over souring) and retains heat in winter (when the pot is wrapped). Dahi is consumed daily, either plain, mixed with rice (dahi bhaat), or used to make chaas, kadhi, and rabdi. Dahi is a genuine probiotic food.


Kadhi (Fermented yogurt curry)


Kadhi is a staple of the Rajasthani thali, served almost daily. Unlike the Gujarati kadhi (which is sweetened), Rajasthani kadhi is sour, spicy, and not sweet. Sour dahi (dahi that has fermented for 2 to 3 days, becoming more acidic) is whisked with chickpea flour (besan), water, ginger paste, green chilies, turmeric, and asafoetida. The mixture is heated gently (stirring continuously to prevent curdling) until it thickens. A tempering (tadka) of mustard seeds, cumin seeds, fenugreek seeds (methi), dried red chilies, and a generous amount of ghee is added. Rajasthani kadhi is often thick and is served with rice (kadhi chawal) or with khichdi. The heating step kills most live microbes if the kadhi is boiled. However, traditional preparation involves gentle simmering (not boiling), preserving a portion of the probiotic LAB. Kadhi is considered a digestive aid and is often served after a heavy meal.


Rajasthani Kadhi with Pakode (Fermented yogurt curry with fritters)


A popular variation of kadhi includes pakode (chickpea flour fritters). The pakode are made from chickpea flour batter (sometimes fermented with buttermilk for 1 to 2 hours), deep fried, and then added to the kadhi. The combination of sour kadhi and soft, absorbent pakode is a classic Rajasthani comfort food. The fermentation of the pakode batter adds a slight tanginess to the fritters.


Rabri (Fermented, clotted sour cream)


Note: This is different from the millet porridge rabdi/raab mentioned earlier. Rabri (also called "raabri" in some dialects) is a traditional fermented dairy product made from whole milk. Milk is boiled and then cooled. A small amount of sour buttermilk (chaas) or sour dahi is added, and the milk is left to ferment for 8 to 12 hours at room temperature. During fermentation, a thick layer of clotted cream (malai) forms on the surface. This malai is skimmed off, and the process is repeated multiple times. The resulting product is a thick, sour, creamy, almost cheese like substance. Rabri is consumed as a condiment with bajre ki roti, or mixed into khichdi or rabdi (the millet porridge). It is a genuine probiotic food (consumed live, without heating). Rabri is particularly common in the Shekhawati region (Jhunjhunu, Sikar, Churu). It is an extremely rich source of probiotics and fat, and is consumed in small quantities.


Sattu ka Doodh (Fermented spiced buttermilk with roasted gram flour)


Sattu (roasted chickpea flour) is mixed with fresh dahi or chaas, water, salt, roasted cumin powder, black salt, and sometimes chopped green chilies and coriander. The mixture is whisked vigorously and consumed as a thick, protein rich, probiotic beverage. Sattu ka doodh is a popular summer drink in Rajasthan (and neighboring states). It provides sustained energy, probiotics, and electrolytes. It is a genuine probiotic beverage when prepared with live dahi or chaas.


Ghee from Cultured Butter (Makhan se Ghee)


Traditional Rajasthani ghee (clarified butter) is made from cultured butter, not from fresh cream. Fresh dahi (curd) is churned to separate the butter (makhan). The butter is then washed and heated to produce ghee. The butter, coming from fermented dahi, contains LAB and their enzymes. When the butter is heated, the microbes are killed, but the enzymatic activity during the culturing stage contributes to a distinct, nutty, complex flavor that is superior to ghee made from fresh cream. This ghee is called "makhan ka ghee" or "desi ghee." It is not probiotic (the heating kills all microbes), but it is nutritionally superior (contains more short chain fatty acids and butyrate) and has a longer shelf life.

Part 3: Fermented Pickles and Condiments


Rajasthan's arid climate and historical scarcity of fresh vegetables (before modern irrigation) made pickling an essential preservation technique. The pickles of Rajasthan are typically very high in salt and oil (mustard oil) to prevent spoilage in the extreme heat. Many pickles are sun fermented for weeks or months.


Khatta Meetha Kair (Fermented caper berry pickle)


Kair (also called "kair" or "caper berry," Capparis decidua) is a wild desert fruit that grows abundantly in the Thar Desert. It is also known as "ker" or "kera." Kair berries are harvested in the summer months (April to June). They are cleaned, dried, and then packed with salt, mustard oil, chili powder, asafoetida, fenugreek powder, and a significant amount of jaggery or sugar (creating the "khatta meetha" or sweet sour balance). The pickle is left to ferment in the sun for 15 to 20 days. The fermentation is driven by halotolerant LAB, primarily Tetragenococcus halophilus, Lactobacillus plantarum, and Pediococcus species. The resulting pickle is intensely flavorful: sweet, sour, salty, spicy, and slightly bitter. Kair pickle is unique to Rajasthan and is virtually unknown in other Indian states. It is served in tiny quantities as a condiment with bajre ki roti and dal. The high salt and sugar content limits consumption.


Ker Sangri (Fermented desert bean and caper berry pickle)


Ker sangri is the most iconic condiment of Rajasthan. It is a mixture of two desert ingredients: kair (caper berries, also called ker) and sangri (desert beans, the pods of Prosopis cineraria, also called khejri or janti). Sangri beans are long, thin, and brown when mature. The dried ker and sangri are rehydrated, then mixed with salt, mustard oil, chili powder, asafoetida, fenugreek powder, and spices. The mixture is left to ferment in the sun for 20 to 30 days. The fermentation softens the tough beans and berries and develops a complex sour, salty, spicy flavor. Ker sangri is served as a dry condiment (like a sabzi) with bajre ki roti or as a side dish with dal bati. It is a staple in desert households during the winter months. The fermentation is primarily LAB driven, but the high salt and oil content limit the probiotic density. However, small amounts of live LAB survive.


Gunda (Fermented cordia pickle)


Gunda (also called "lasora" or "cordia," Cordia myxa) is a small, sticky fruit that grows on a tree common in the arid regions of Rajasthan. The fruit is harvested, cleaned, and slit open. It is then stuffed with a mixture of salt, chili powder, asafoetida, fenugreek powder, and mustard oil. The stuffed gunda fruits are packed into a jar and left to ferment in the sun for 15 to 25 days. The fermentation softens the sticky fruit and develops a complex, sour, salty, spicy flavor. Gunda pickle is a popular condiment in the Marwar and Mewar regions. It is served with bajre ki roti, khichdi, or dal bati. The high salt content limits consumption.


Lehsun ki Chutney (Fermented garlic chutney)


Lehsun ki chutney is a fermented garlic chutney, similar to the Gujarati lasan ni chutney. Fresh garlic cloves are crushed with salt, chili powder, and a small amount of mustard oil, and then left to ferment for 5 to 7 days. The fermentation reduces the pungency of the raw garlic (allicin degrades) and produces a sour, salty, intensely flavorful chutney. It is consumed in tiny quantities as a condiment with bajre ki roti and dal. Garlic chutney is avoided by Jains and some Vaishnava communities but is popular among the Rajput and other communities. The high salt content limits consumption.


Hari Mirch ka Achar (Fermented green chili pickle)


Green chilies are slit (or left whole) and packed with salt, mustard oil, asafoetida, and lemon juice. The pickle is left to ferment in the sun for 10 to 15 days. The chilies soften and become intensely salty and sour. Fermented green chili pickle is served as a condiment. It is particularly popular in winter when fresh green chilies are abundant. The fermentation is LAB driven.


Aam ka Achar (Fermented mango pickle)


Rajasthan produces a mango pickle (aam ka achar) similar to other North Indian pickles, but with a distinct Rajasthani spice blend that includes more fenugreek (methi) and fennel (saunf). Raw mango pieces are mixed with salt, chili powder, asafoetida, fenugreek powder, fennel powder, and mustard oil, and left to ferment in the sun for 15 to 20 days. The high proportion of mustard oil (a preservative) and salt means that the live LAB population is lower than in South Indian fermented pickles, but some survive. The pickle is served as a condiment.


Nimbu ka Achar (Fermented lime pickle)


Lime pickle (nimbu ka achar) is made by fermenting whole or quartered limes with salt, chili powder, asafoetida, and sometimes a small amount of jaggery. The fermentation takes 15 to 30 days. Rajasthani lime pickle is often more salty and less sweet than the Gujarati version.

Part 4: Fermented Beverages


Rajasthan's extreme climate makes hydration a critical concern. Fermented beverages, particularly dairy based ones (chaas, mattha, sattu ka doodh), are consumed daily. Non dairy fermented beverages are less common but exist in tribal and rural areas.


Chaas (Already covered in Part 2, but as a beverage)


Chaas is the primary fermented beverage of Rajasthan. It is consumed as a drink with meals and between meals. In the summer, chaas is often flavored with dried mint (pudina) or a few drops of kewra water (pandanus essence).


Kanjhi (Fermented carrot beverage)


Kanjhi is a traditional fermented beverage made from black carrots (or red carrots). It is identical to the Gujarati kanjhi and is also popular in Rajasthan during the winter months (December to February). Black carrots are peeled, cut into pieces, and mixed with water, salt, mustard powder (rai), and asafoetida. The mixture is left to ferment in a glass or ceramic jar in the sun for 3 to 5 days. The fermentation is driven by Lactobacillus plantarum and Leuconostoc species, and the mustard powder contributes to the pungency. The resulting kanjhi is a sour, spicy, effervescent, pinkish red beverage. It is consumed as a digestive drink and is also used to treat mild digestive ailments. The carrot pieces are eaten as a pickle. Kanjhi is a genuine probiotic beverage. It is particularly popular in the Shekhawati and Hadoti regions.


Jaljeera (Non fermented, but sometimes fermented variation)


Standard jaljeera is not fermented. However, a traditional variation called "khatta jaljeera" or "fermented jaljeera" exists in some rural households. A mixture of water, roasted cumin powder, black salt, ginger, green chilies, and a small amount of leftover sour buttermilk (chaas) is left to ferment for 2 to 4 hours. The resulting beverage is sour, spicy, and effervescent. It is consumed as a digestive drink after meals.


Taak (Another name for chaas)


Taak is the Sanskrit and Rajasthani word for buttermilk, used interchangeably with chaas.


Fermented Millet Kanji (Bajre ka kanji)


In rural areas, a fermented kanji made from pearl millet (bajra) is prepared. Bajra flour is mixed with water, salt, and a small amount of sour buttermilk, and left to ferment for 8 to 12 hours. The resulting thin, sour porridge (or beverage, depending on water content) is consumed as a hydrating and nourishing drink. It is similar to the millet rabdi but thinner. This product is rare and is confined to very traditional rural households.

Part 5: Other Fermented Foods


Papad (Fermented lentil wafers)


Papad (also called "appalam" in South India) is a traditional fermented wafer made from lentil flour (urad dal, moong dal, or chana dal). The lentil flour is mixed with water, salt, and a small amount of baking soda or leftover fermented batter, and formed into a stiff dough. The dough is left to ferment for 4 to 6 hours. After fermentation, the dough is rolled into thin rounds and sun dried for 1 to 3 days. The sun drying allows for continued surface fermentation by halotolerant LAB. The dried papad is stored. Before eating, it is roasted over an open flame, deep fried, or microwaved. The high heat kills live microbes, but the fermentation enhances digestibility and reduces flatulence causing oligosaccharides. Papad is a staple accompaniment to meals in Rajasthan. Rajasthani papad (particularly from Pali, Jodhpur, and Bikaner) is famous across India.


Mangodi (Fermented sun dried lentil dumplings)


Mangodi (also called "mangodi" or "vadi") are sun dried dumplings made from fermented lentil paste. Moong dal (green gram) or urad dal is soaked, ground into a paste with water, salt, and spices (ginger, green chilies, asafoetida), and left to ferment for 4 to 6 hours. The fermented paste is then shaped into small dumplings and sun dried for 2 to 3 days. The sun drying allows for surface fermentation. The dried mangodi are stored and used as an ingredient in curries (mangodi ki sabzi) or added to dal. The cooking kills live microbes, but the fermentation enhances digestibility. Mangodi is a traditional way to preserve dal in the arid climate, where fresh vegetables are scarce for months.


Wadi (Fermented sun dried lentil cakes)


Wadi (also called "bori" in some regions) are larger sun dried cakes made from fermented lentil paste, similar to mangodi but often larger and sometimes spiced with fennel, asafoetida, and black pepper. They are used in the same way as mangodi.

Part 6: Starter Cultures and Fermentation Vessels


Rajasthan's harsh climate has necessitated unique fermentation practices and vessels.


Earthen pots (Matka, Ghada)


Traditional Rajasthan households ferment dahi (curd) and store ferments in unglazed earthen pots called matka or ghada. The porous clay allows evaporative cooling, which is essential in the desert summer. In extreme heat (45 degrees Celsius plus), the matka is often covered with a wet cloth. The water evaporates from the cloth and the pot surface, cooling the contents by 5 to 10 degrees Celsius, allowing fermentation to proceed at a controlled rate rather than racing to excessive sourness. In winter, the same matka can be wrapped in a quilt (rajai) or placed near the hearth (chulha) to retain heat. The porous inner surface retains a biofilm of LAB from previous batches, acting as a passive starter culture. Matkas that have been used for decades are highly prized and are said to produce the best dahi.


Underground fermentation pits (Tahkhana or Bhar)


In the desert regions of western Rajasthan (Jaisalmer, Barmer, Bikaner), traditional households use underground chambers called "tahkhana" (literally "below the house") or "bhar" for fermentation and storage. These underground cellars maintain a constant, cool temperature (typically 20 to 25 degrees Celsius) even when outside temperatures exceed 45 degrees Celsius. Earthen pots containing batters, pickles, or dahi are placed in the tahkhana for slow, controlled fermentation. This practice is essential for preparing certain fermented products (such as slow fermented pickles) during the brutal summer months. The tahkhana also acts as a passive starter culture reservoir, as the walls and floor are inoculated with LAB and yeasts over generations. This practice is unique to the desert regions of Rajasthan and is not found in other Indian states.


Buttermilk (Chaas) as a starter


As in Gujarat, Rajasthan almost always uses a starter culture for fermentations. Sour buttermilk (chaas) or sour yogurt (dahi) is added to batters and doughs to initiate fermentation. This is essential in the dry climate, where airborne LAB counts are very low (due to low humidity and dust). Without a starter, spontaneous fermentation would be unreliable and would often fail or result in spoilage.


Jaman (The sour curd starter)


Jaman (also called "jamavan" or "khatta dahi") is the Rajasthani term for the reserved, sour curd starter used to inoculate fresh milk. A small amount of jaman is saved from each batch of dahi and stored in a small earthen pot (katori) in a cool place (often in the tahkhana). Jaman is kept alive for years, passed down from mother to daughter. It is considered a family heirloom. The jaman develops a complex microbial consortium over time, adapted to the specific household environment. A good jaman produces consistently good dahi. If the jaman becomes contaminated or dies, the household will obtain fresh jaman from a neighbor or relative. This practice is identical to sourdough starter maintenance in Western baking.

Final Safety and Consumption Note


While traditional fermented foods of Rajasthan offer significant nutritional and probiotic benefits, several safety considerations specific to the state's extreme climate and unique products should be noted.


For fermented grain and millet products (bajre ki roti, rabdi, fermented dal, gatte, kachaudi, daal baati dal): These products are cooked, steamed, or deep fried, which kills all live microorganisms. They are safe for immunocompromised individuals, pregnant women, and infants. However, rabdi (the millet porridge) is sometimes consumed raw (uncooked) in traditional rural households. Raw fermented rabdi is a genuine probiotic food but carries a risk of contamination. Only rabdi with a clean, sour smell (like yogurt) and no visible mold or slime should be consumed raw. Pregnant women and immunocompromised individuals should avoid raw rabdi and consume only cooked rabdi. Batter or dough that has fermented for too long (more than 12 hours in summer, more than 24 hours in winter) may become excessively sour (vinegar like) or develop off flavors. A putrid smell, visible mold, or slimy texture indicates spoilage, and the product should be discarded.


For dairy products (dahi, chaas, mattha, kadhi, rabri, sattu ka doodh, ghee): Dahi, chaas, mattha, rabri (clotted sour cream), and sattu ka doodh are genuine probiotic foods when consumed live (not heated). They are generally safe for healthy individuals. For pregnant women, these are safe and recommended (except rabri, which is very rich in fat and should be consumed in moderation). Kadhi, if gently heated (not boiled), retains some probiotics and is safe. Ghee (from cultured butter) is not probiotic (the heating kills all microbes) but is safe for everyone. For immunocompromised individuals, live dairy ferments are generally safe, but consultation with a physician is advised. Dahi that has been stored for more than 5 to 7 days, or that shows signs of mold (green, black, or pink spots), should be discarded. In the extreme summer heat, dahi can become excessively sour (pH below 3.5) within 24 hours; this is still safe to eat but may cause digestive discomfort in some individuals.


For fermented pickles and condiments (kair, ker sangri, gunda, lehsun ki chutney, hari mirch, aam ka achar, nimbu ka achar): These products have a very high salt content (15 to 20 percent) and a high oil content (mustard oil). Individuals with hypertension, congestive heart failure, chronic kidney disease, or gallbladder disease should consume these pickles only in extremely small quantities or avoid them entirely. Pregnant women can consume these pickles in small amounts, but excessive salt intake should be avoided. For ker sangri, the dried beans and berries must be properly rehydrated and fermented. Any pickle that develops a slimy texture, unusual colors, or a putrid, rotten smell should be discarded. A white film on the surface (kahm yeast) is not necessarily harmful but indicates air exposure; the yeast layer should be removed, and the pickle below should be checked for off odors. Mold growth (green, black, or pink) on the surface warrants discarding the entire batch. Pickles fermented in mustard oil: mustard oil contains erucic acid, which is safe in small quantities but may cause issues if consumed in very large amounts. As these pickles are consumed in tiny quantities (usually less than 5 to 10 grams per meal), this is not a concern.


For fermented beverages (chaas, mattha, kanjhi, fermented jaljeera, fermented millet kanji): Chaas, mattha, and sattu ka doodh are non alcoholic and safe for everyone, including pregnant women. Kanjhi is non alcoholic (alcohol content below 0.5 percent) and safe for pregnant women. Fermented millet kanji (bajre ka kanji) is non alcoholic and safe. Fermented jaljeera is non alcoholic. The fermented millet kanji (if made as a beverage) and kanjhi should be consumed within 3 to 5 days of preparation. Any beverage with a putrid smell, visible mold, or a thick slimy consistency should be discarded.


For individuals on monoamine oxidase inhibitor (MAOI) medications: Aged products such as long fermented pickles (kair, ker sangri, gunda stored for more than 6 months) and aged jaman (very sour curd starter) may contain elevated levels of tyramine. These individuals should avoid aged fermented foods or consult their physician. Freshly fermented products (fresh dahi, fresh chaas, fresh kanjhi) have lower tyramine levels and are generally safe.


For general consumers: Start with small quantities of any new fermented food to assess individual tolerance. Fermented foods are generally safe for healthy individuals. Pregnant women, immunocompromised individuals, and infants under one year should consult a physician before adding significant quantities of live fermented foods to their diet. For cooked fermented products (bajre ki roti, fermented dal, gatte, kachaudi, papad, mangodi, wadi), no consultation is needed as these are safe for everyone.


Note on Commercial Products: Many commercially available dahi, chaas, lassi, kadhi, pickles, and papad are pasteurized or contain preservatives. These products do not contain live probiotics. For probiotic benefits, traditional, homemade, or fresh (non pasteurized) products are required. For dahi and chaas, look for "live cultures" or "contains active bacteria" on the label. For pickles, traditional sun fermented pickles (often sold in glass jars in specialty stores) are more likely to contain live microbes than mass produced, heat processed pickles. For papad, commercial papad is often made with baking soda and no fermentation; traditional, sun dried papad is increasingly rare.


Note on Water Scarcity and Hygiene: In the arid regions of Rajasthan, water is scarce. Traditional fermentation practices are adapted to this reality. However, hygiene is still critical. Contaminated water used in fermented beverages or batters can introduce pathogens. In rural areas, water is often boiled before use in ferments (or is drawn from deep wells with lower contamination risk). For travelers consuming traditional fermented foods in rural Rajasthan, it is advisable to stick to cooked ferments or to purchase from reputable sources.
