A Comprehensive Guide to Probiotic and Fermented Foods of Nepal

Nepal, a landlocked country in South Asia, stretches across the Himalayan foothills and the Gangetic plains. The country is home to over 125 distinct ethnic groups and castes, including Brahmin, Chhetri, Newar, Tamang, Gurung, Magar, Rai, Limbu, Tharu, and many others, each contributing to an extraordinarily diverse culinary heritage. Fermented foods are an intrinsic part of the traditional diet across all communities, consumed daily as condiments, side dishes, soups, pickles, and beverages, or used as essential ingredients in curries and stews. These foods are valued not only for their distinct flavors and aromas but also for their probiotic benefits, improved digestibility, and enhanced nutritional profiles, including higher levels of vitamins, essential amino acids, and bioactive peptides.


Scientific studies have isolated and identified several probiotic lactic acid bacteria (LAB) from Nepal's fermented foods, including various species of Lactobacillus, Pediococcus, Leuconostoc, and Enterococcus. Many of these isolates have demonstrated promising antimicrobial activity, bile salt hydrolase capabilities, cholesterol lowering potential, and survival under simulated gastrointestinal conditions.


This document organizes the major fermented foods of Nepal by substrate type: fermented vegetable products, fermented soybean products, fermented dairy products, fermented meat and fish products, fermented beverages with their starter cultures, and other miscellaneous ferments.

Part 1: Fermented Vegetable Products


Nepal has an exceptionally rich tradition of lactic acid fermented vegetables. These are predominantly spontaneous fermentations, relying entirely on naturally occurring lactic acid bacteria without the use of a starter culture. Many products are sun dried after fermentation for long term storage, allowing year round availability in a country with distinct seasonal patterns.


Gundruk


Gundruk is the most important and widely consumed fermented vegetable product of Nepal, often considered the national fermented food. It is made from the leaves of mustard (Brassica juncea), radish (Raphanus sativus), cauliflower, or cabbage. The fresh leaves are wilted in the sun for one to two days, then chopped and tightly packed into an earthen pot or bamboo basket. The container is sealed airtight with leaves, mud, or polythene and left to ferment for 7 to 15 days. After fermentation, the sour product is removed and sun dried until crisp. Gundruk can be stored for up to one year. It is typically eaten as a soup (gundruk ko jhol), fried as a side dish, or used as a pickle. Studies have isolated Lactobacillus plantarum, Lactobacillus brevis, Lactobacillus fermentum, Pediococcus pentosaceus, and Leuconostoc fallax from gundruk. The pH of fermented gundruk drops from approximately 6.5 to below 4.0. The product is rich in minerals and dietary fiber, and the fermentation process reduces glucosinolate content, which can be antinutritional when present in high amounts. Annually, approximately 2,000 tons of gundruk are produced in Nepal.


Sinki


Sinki is a fermented and dried radish taproot product, similar in principle to gundruk but specifically made from radish (Raphanus sativus). Fresh radish taproots are washed, cut into pieces, and wilted in the sun for one to two days. The pieces are then tightly packed into an earthen pot or bamboo basket and sealed airtight. Fermentation proceeds for 10 to 15 days, after which the sour fermented radish is sun dried. Sinki has a sharp, sour, and slightly pungent flavor. It is used in soups, pickles, and as a side dish. The dominant microorganism in sinki is Lactobacillus plantarum, which appears later in the fermentation process and produces the majority of the lactic acid, leading to a drop in pH from approximately 6.7 to 3.3. Lactobacillus brevis and Lactobacillus fermentum also play roles in the early stages. Sinki is particularly valued in the mountainous regions where fresh vegetables are scarce during winter months.


Khalpi


Khalpi is a fermented cucumber pickle, popular in the hilly regions of Nepal. Young, tender cucumbers are cut into pieces and mixed with salt, chili powder, turmeric, and mustard oil. The mixture is tightly packed into a glass jar or earthen pot and fermented at room temperature for three to five days. The resulting product is sour and spicy, eaten as a side dish or condiment. Unlike gundruk and sinki, khalpi is typically consumed fresh rather than dried, and has a shorter shelf life. The primary microorganisms involved are Lactobacillus plantarum, Lactobacillus brevis, and Leuconostoc mesenteroides.


Mesu


Mesu is a fermented young bamboo shoot product, consumed widely in the eastern hills of Nepal. Tender, edible bamboo shoots are sliced into thin shreds or small pieces. These are tightly packed into a bamboo cylinder or glass jar and sealed airtight. No water, salt, or starter is added. The shoots are left to ferment for 7 to 15 days, developing a characteristic sour taste and slightly pungent aroma. Mesu is eaten as a pickle, often with chili, salt, and turmeric, or used as a vegetable in curries. The fermentation is driven by various species of lactic acid bacteria, including Lactobacillus plantarum and Leuconostoc fallax. Unlike the Manipuri Soibum, which ferments for 9 to 12 months, mesu is a short term fermentation product consumed relatively soon after preparation.


Dalle Pickle


Dalle pickle is a fermented pickle made from the famous Dalle khursani (Cirsium arvense), a round, extremely hot red chili variety grown in the hilly regions of eastern Nepal. The chilies are slit or left whole, mixed with salt, mustard oil, turmeric, fenugreek seeds, and sometimes lemon juice, and left to ferment in a sealed jar for several weeks. The fermentation mellows the intense heat slightly while developing complex sour and savory notes. Lactobacillus species are the primary fermentative agents. Dalle pickle is consumed as a condiment with almost every meal in households where the chili is cultivated.


Torani


Torani is a sour liquid byproduct obtained during the preparation of gundruk and sinki. After the leafy vegetables or radish pieces have fermented, the expressed liquid (torani) is collected and used as a souring agent in curries, soups, and pickles. It functions as a natural, fermented alternative to tamarind or lemon juice. Torani itself is a rich source of lactic acid bacteria and organic acids. Some households intentionally produce torani as a separate product by fermenting crushed leaves with a small amount of water.

Part 2: Fermented Soybean Products


Soybean fermentation is a cornerstone of Nepali cuisine, particularly among the hilly and mountainous communities. These products are alkaline, sticky, and pungent, produced by Bacillus subtilis fermentation.


Kinema


Kinema is the most common and widely consumed fermented soybean product of Nepal, particularly among the Brahmin, Chhetri, and Rai communities of the eastern hills. The name kinema is derived from the Nepali language, where it means "fermented flavor." Small, locally grown soybeans (preferably black seeded varieties) are collected, cleaned, and soaked overnight. They are then boiled for approximately 30 minutes or until soft, and the excess water is drained away. The cooked soybeans are lightly crushed between stones or by hand, wrapped in fresh fern leaves (Diplazium esculentum), fig leaves, or banana leaves, or placed in a perforated polythene bag. The package is left to ferment near a fireplace or at room temperature for two to three days in summer and three to four days in winter. The appearance of a sticky, white, slimy coating with a strong, pungent, ammonia like smell indicates that the kinema is ready.


Kinema is a protein rich product containing about 43 to 48% protein on a dry matter basis. The fermentation process is driven primarily by Bacillus subtilis, with populations reaching 8 to 9 log cfu/g. Enterococcus faecium occurs in all kinema samples, along with yeasts like Candida parapsilosis and Geotrichum candidum in some market samples. Kinema also contains free amino acids, including all essential amino acids, and has increased levels of vitamins, particularly the B complex.


A unique advantage of Bacillus subtilis fermentation is that it produces heat resistant endospores. This means that even after cooking (frying or boiling kinema in curries), viable spores remain, and once ingested, they can germinate in the intestine, providing live probiotic benefits that many other fermented foods lose upon heating.


Kinema is typically prepared as a thick curry. It is first dry roasted or fried until the sticky texture is reduced and the product becomes crumbly, then cooked with onions, tomatoes, chilies, and spices. It serves as a meat substitute, particularly for vegetarian households. Kinema is also used in soups (kinema ko jhol) and as a side dish with rice. Some communities add kinema to dhal or vegetable curries as a flavor enhancer.


Note on Variants: Kinema is essentially the same product as Hawaijar of Manipur, Bekang of the Mizo, and Tungrymbai of Meghalaya. The primary differences lie in the specific plant leaves used for wrapping, the crushing method, and the exact fermentation duration.

Part 3: Fermented Dairy Products


Nepal has a long tradition of pastoralism, particularly among the Sherpa, Gurung, Magar, Tamang, and Tharu communities. Fermented dairy products are central to the diet of these groups, especially in the high Himalayan region where yak and cow rearing is common.


Chhurpi (Hard and Soft Varieties)


Chhurpi is a traditional fermented cheese product, made by the Nepali, Sherpa, Gurung, Tamang, and Bhutia communities across the Himalayan belt of Nepal. There are two main varieties: soft chhurpi and hard chhurpi.


Soft chhurpi is a fresh, soft cheese made by fermenting boiled milk (yak, cow, or a mixture) with a starter from a previous batch. The curds are collected in a muslin cloth, hung to drain excess whey, and pressed lightly. The resulting soft mass has a moisture content of approximately 30 to 40% and a mild, slightly sour taste. Soft chhurpi is used as a condiment, eaten with green vegetables as a savory dish, used as a filling for momos, ground with tomatoes and chilies for chutney, or made into a refreshing soup (chhurpi ko jhol).


Hard chhurpi is produced by taking the soft chhurpi curds and pressing them very firmly, sometimes for several days under heavy stones, to expel almost all moisture. The pressed cheese is then cut into blocks and hung in a smoky kitchen, dried in the sun, or stored in a warm, dry place for several weeks. The final product is extremely hard (moisture content below 10%), with a dense, layered texture. Hard chhurpi is used as a masticatory (chewing item) and is considered both nutritious and a palate cleanser. A single small piece can be chewed for several hours, similar to gum. It is often given to children as a snack or carried by travelers as a durable, long lasting source of protein.


Studies have isolated Lactobacillus plantarum, Lactiplantibacillus plantarum, Lactococcus lactis, and Leuconostoc mesenteroides from chhurpi. These isolates have demonstrated significant probiotic properties, including survival under simulated gastrointestinal conditions (pH 2.0 and bile salts), auto aggregation capacity, bile salt hydrolase activity (important for cholesterol metabolism), and antimicrobial activity against common pathogens including Escherichia coli, Staphylococcus aureus, and Salmonella typhi. The smoky environment used in hard chhurpi production also imparts characteristic phenolic compounds with additional antimicrobial properties.


Mohi


Mohi is a fermented buttermilk product, traditionally produced after churning butter from curd (dahi). Fresh dahi is churned, typically using a wooden churner (theki), to separate butter (nuni). The remaining liquid is mohi. Mohi has a thin consistency and a sour, refreshing taste. It is consumed as a beverage, often mixed with salt, roasted cumin powder, and fresh coriander. Mohi is also used as a base for soups and as a marinade for meat. The microbial population of mohi includes Lactococcus lactis, Leuconostoc citreum, and various Lactobacillus species. Mohi is considered a digestive aid and is traditionally consumed after heavy or rich meals. The product is a rich source of probiotics, B vitamins, and calcium.


Dahi (Curd)


Dahi is the Nepali equivalent of yogurt, produced by fermenting boiled and cooled milk with a starter culture from a previous batch. The starter contains Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus, along with other mesophilic LAB. The fermentation is typically carried out in an earthen pot (hando), which maintains a stable temperature and allows slow evaporation. Nepali dahi is traditionally set in the evening and ready by the following morning. Unlike commercial yogurt, traditional dahi has a thinner consistency, a varied tartness, and a higher diversity of LAB. Dahi is consumed daily in many households as a side dish with rice (dahi bhat), as a dessert mixed with sugar or jaggery, or as a base for the popular beverage lassi. Dahi is also an essential component of many religious offerings and rituals.


Theop (Chhurpi Soup Base)


Theop is a traditional fermented whey product, consumed primarily by the Tamang and Sherpa communities of the high Himalayan region. It is produced by collecting the whey drained during chhurpi preparation and allowing it to undergo further spontaneous fermentation. Theop has a thin, watery consistency, a sharp sour taste, and a slightly effervescent quality due to carbon dioxide production. It is consumed as a refreshing drink or used as a soup base. The dominant microorganisms include various Lactobacillus and Leuconostoc species. Theop is particularly valued at high altitudes where fresh vegetables are scarce, as it provides both hydration and beneficial bacteria.

Part 4: Fermented Meat and Fish Products


Nepal has several traditional preserved meat and fish products. These are typically found among specific ethnic groups, particularly in the eastern hills and the Himalayan region. Many involve combinations of fermentation, smoking, drying, and the use of fats and oils for preservation.


Sukuti


Sukuti is a dried and sometimes smoked meat product, widely consumed across Nepal. Lean meat from water buffalo, beef (among non Hindu communities), goat, or lamb is cut into thin strips, marinated with salt, turmeric, chili, and other spices, and then hung to dry in the sun or near a fireplace for several days to weeks. The product undergoes some surface microbial fermentation during the slow drying process, particularly if hung in a traditional kitchen environment where smoke and ambient microbes contribute to the flavor profile. Sukuti is typically rehydrated and fried as a side dish, added to soups, or used as a filling for momos. It is also consumed as a snack, often beaten and shredded into a form called sukuti ko sadeko, mixed with raw onions, green chilies, cilantro, and lemon juice. The production of sukuti is a significant source of income for many rural households, with estimates suggesting over 1,000 tons produced annually in Nepal.


Sidhra


Sidhra is a fermented and sun dried fish product, prepared primarily by the Tharu community of the Terai (lowland) region of Nepal. Small freshwater fish (mainly Puntius species) are cleaned, sun dried for one to two days, then packed tightly into an earthen pot. The pot is sealed and left to ferment for 15 to 30 days. After fermentation, the fish are sun dried again until completely dry. Sidhra has a strong, pungent odor and a distinctive flavor. It is used as a condiment or side dish, often fried and eaten with rice. The fermentation is driven by naturally occurring lactic acid bacteria and halophilic (salt tolerant) microbes, though the product is traditionally made without added salt. Sidhra has a high protein content and provides a source of calcium from the small, edible bones.


Gnuchi


Gnuchi is a traditional fermented meat product of the Kathmandu Valley, specifically associated with the Newar community. It is made from the internal organs, particularly the small intestines, of water buffalo. The intestines are thoroughly cleaned, boiled, chopped, and then mixed with fat, spices, and sometimes blood. The mixture is stuffed back into the intestinal casing and fermented for several days. Gnuchi has a complex, slightly sour, and savory flavor. It is considered a delicacy and is prepared during special festivals, particularly the Newar festival of Yomari Punhi. The product is typically sliced and fried before consumption.


Kachila


Kachila is a fresh, uncooked fermented meat preparation from the Newar community of the Kathmandu Valley. Finely minced water buffalo meat is mixed with mustard oil, ginger, garlic, green chilies, cumin, coriander, and other spices, along with a souring agent such as lemon juice or pomegranate seeds. The mixture is marinated and left to sit for several hours, during which the acid from the souring agent, along with naturally occurring microbes, begins to break down the meat proteins. Kachila is consumed raw, without any cooking. While kachila is not a long term fermentation, the brief acid and microbial action qualifies it as a fermented food. It is typically eaten as a side dish or appetizer. Due to the risks of consuming raw meat, kachila is prepared only from very fresh, high quality meat and consumed immediately. It is not recommended for immunocompromised individuals or pregnant women.

Part 5: Starters for Alcoholic Beverages


Nepal has an exceptionally rich tradition of fermented millet, rice, and other cereal based alcoholic beverages. These are made using dry, cake like starter cultures known by different names across various ethnic groups. These starters are complex consortia of amylolytic molds, fermentative yeasts, and lactic acid bacteria, working in sequence to convert starches into fermentable sugars and then into alcohol.


Murcha (also known as Marcha)


Murcha is the traditional starter culture used to ferment finger millet seeds, rice, or other starchy materials to produce alcoholic beverages throughout Nepal. It is a spherical, flattened, or irregularly shaped solid cake, typically white to grey in color. Murcha is prepared from rice flour mixed with a variety of wild herbs, roots, barks, and spices, along with an older batch of murcha as an inoculum. The specific plant materials vary by region and ethnic group. Documented ingredients include the roots of Plumbago zeylanica, the barks of Litsea polyantha, the leaves of Clerodendrum viscosum, and the seeds of other plants. The mixture is ground into a paste, formed into cakes, and dried for several days. The finished murcha cakes remain viable for several months when stored in a cool, dry place.


The microbial flora of murcha is a complex, stable consortium. It contains lactic acid bacteria, primarily Pediococcus pentosaceus and Lactobacillus plantarum; yeasts belonging to the genera Saccharomycopsis (particularly Saccharomycopsis fibuligera), Pichia, Saccharomyces (including Saccharomyces cerevisiae), and Candida; and the molds Rhizopus (particularly Rhizopus oryzae) and Mucor. This combination of amylolytic molds (which secrete amylases to break down starches into simple sugars) and fermentative yeasts (which convert sugars to alcohol and carbon dioxide) makes murcha a highly effective starter for cereal based fermentations. The molds also contribute to the aroma profile of the final beverage. The lactic acid bacteria produce organic acids that lower the pH, inhibit spoilage organisms, and contribute to the characteristic sour notes of some beverages.


Jaanr (also known as Chhyang)


Jaanr is a mild, sweet sour alcoholic beverage made by fermenting finger millet seeds (Eleusine coracana), rice, or maize using murcha as the starter. The cereal is cooked (often by steaming), spread out to cool, then mixed thoroughly with crushed murcha. The mixture is packed tightly into an earthen pot or bamboo basket, covered with leaves or a cloth, and left to ferment at room temperature for two to five days, depending on ambient temperature. The resulting product is a semi solid fermented mash. This mash is then transferred to a vessel, and warm water is added. The mixture is stirred and allowed to steep for 10 to 30 minutes. The liquid (jaanr) is then strained through a bamboo sieve or cloth and consumed. The remaining solids can be re steeped multiple times.


Jaanr has a milky, cloudy appearance, a mildly sweet and sour taste, and an alcohol content ranging from 4 to 8%. It is consumed widely during festivals, social gatherings, and daily meals in many rural communities. Jaanr is offered to guests as a sign of hospitality, particularly among the Rai and Limbu communities, where it is considered a sacred beverage. It is also used in various religious rituals and agricultural ceremonies, such as sowing and harvest festivals. Jaanr is a non distilled beverage, meaning it retains live yeasts, molds, and lactic acid bacteria. However, the alcohol content limits the quantity one can consume for probiotic benefit. Nevertheless, the beverage contributes to gut health through its live microbial content and its prebiotic soluble fibers. Studies have shown that jaanr has antioxidant properties and contains bioactive peptides generated during fermentation.


Tongba (Kodo ko Jaanr)


Tongba is a specific variety of jaanr made exclusively from finger millet (kodo) and is the traditional beverage of the Rai and Limbu (Kiranti) communities of eastern Nepal. It has a unique serving method. The fermented finger millet mash is transferred to a special wooden or bamboo vessel (also called a tongba). Hot water is poured into the vessel, allowed to steep for a few minutes, and the beverage is then sipped through a narrow bamboo straw (pipsing or naluwa). The straw has small holes at the lower end to filter out the millet grains. The same mash can be refilled with hot water several times until the flavor is exhausted. Tongba is central to Kiranti cultural identity and is consumed during all major festivals, including Udhauli, Ubhauli, and Chasok Tangnam. The preparation of tongba is typically a male domain, with specific rituals governing its fermentation and serving.


Raksi


Raksi is the distilled version of jaanr, typically prepared from rice, finger millet, or a mixture of grains. The fermented mash (jaanr) is heated in a traditional copper or aluminum still, and the condensed vapors are collected as a clear, potent liquor. Raksi typically has an alcohol content ranging from 20 to 40%. Distillation destroys the live microorganisms, including yeasts, molds, and bacteria, so raksi does not have probiotic properties. Some specialized distillation setups include a chamber where the vapors pass through a water seal that imparts additional flavor from added herbs. While raksi is culturally significant and widely consumed, it does not provide the microbiome supporting qualities that are the cornerstone of fermented health foods. However, the distillation process concentrates certain volatile flavor compounds, making raksi distinct from its source jaanr.


Chhaang


Chhaang is a Himalayan alcoholic beverage, similar to jaanr, consumed by the Sherpa, Tamang, and Tibetan communities of northern Nepal. It is made from barley (particularly the high altitude naked barley variety), rice, or millet, using murcha as the starter. The preparation method is nearly identical to jaanr. Chhaang is traditionally drunk from a communal wooden or brass bowl through a bamboo straw, similar to tongba. It is an essential part of Sherpa hospitality and is consumed during all social and religious events, including Losar (Tibetan New Year) and Mani Rimdu. Chhaang is also credited with providing energy and helping to prevent altitude sickness in the high Himalayas, likely due to its calorie content and hydration properties.

Part 6: Other Fermented Foods


Ghee (Clarified Butter with Microbes)


Nepali ghee (clarified butter) produced from the milk of grass fed yaks, cows, or water buffaloes has a distinct flavor profile that differs from industrially produced ghee. Traditional ghee is made from mohi or dahi and is often stored for months or years. Over time, the ghee undergoes slow, lipid mediated fermentation and oxidation, developing a complex, pungent, almost cheese like aroma. This aged ghee, known as gorkha ghee, is highly prized and commands a premium price. While ghee itself is primarily fat, the long aging process in traditional vessels allows for the presence of bioactive compounds and small amounts of lipophilic microbial metabolites. Some studies have documented the presence of specific yeasts and bacteria in aged ghee, though the low water activity limits active microbial growth. Aged ghee is used as a condiment, cooking medium, and traditional medicine for wound healing and respiratory ailments.


Saelroti (Sel Roti)


Saelroti is a deep fried, ring shaped confectionary bread, produced from fermented rice batter. Rice is soaked for several hours, ground into a batter (often with added sugar, cardamom, cloves, and sometimes ripe banana), and left to ferment naturally overnight or for 8 to 12 hours. The fermented batter doubles in volume due to carbon dioxide production by naturally occurring yeasts and lactic acid bacteria. The batter is then poured in a continuous stream into hot oil, forming concentric rings that fuse together into a single circular bread. Saelroti is crispy on the outside and soft on the inside. It is a traditional snack, especially popular during festivals like Dashain, Tihar, and Chhath, as well as during weddings and religious ceremonies. The fermentation process improves the nutritional profile by reducing antinutrients such as phytic acid, increasing the bioavailability of iron and zinc, and adding B vitamins. Saelroti is typically consumed on its own or with dahi, vegetables, or meat curries.


Kinima


Kinima is a lesser known fermented bamboo shoot product from the Tharu community of the Terai region. Unlike the hill bamboo ferments (mesu), kinima is made by fermenting bamboo shoot slices in water with salt (approximately 3 to 5% salt concentration) for several weeks. The salt selects for a slightly different microbial community, including more halotolerant Lactobacillus species and sometimes Pediococcus. Kinima is consumed as a sour, salty pickle or used as a vegetable in curries.


Masyaura


Masyaura (also known as wari or bari) is a fermented and sun dried product made from black lentil (Vigna mungo) paste mixed with chopped leafy vegetables, particularly taro leaves (Colocasia esculenta) or mustard leaves. The paste is formed into small balls (or sometimes cylindrical shapes) and sun dried for several days. During the drying process, surface fermentation occurs, primarily from wild yeasts and Bacillus species. The dried masyaura can be stored for months. It is rehydrated and cooked in curries as a meat substitute. Masyaura has a distinctive sour taste contributed by the fermentation. It is particularly common among the Brahmin and Chhetri communities. While the fermentation is less intense than in products like kinema, it still contributes to digestibility and flavor development.

Final Safety and Consumption Note


While traditional fermented foods offer significant probiotic and nutritional benefits, first time consumers should start with small amounts to assess individual tolerance.


For vegetable ferments like gundruk and sinki: Begin with one to two tablespoons of gundruk soup or a small serving of khalpi. The high acidity (pH 3.0 to 4.0) may cause discomfort in individuals with acid reflux, gastritis, or peptic ulcers.


For soybean ferments like kinema: Begin with 10 to 15 grams (approximately one tablespoon) of the product. The strong flavor and ammonia like odor can be surprising to new consumers, and the high protein content may cause mild digestive upset in those unaccustomed to it. The product is generally safe and the Bacillus subtilis endospores survive cooking.


For dairy ferments like chhurpi: Hard chhurpi should be chewed, not swallowed whole. It can be a choking hazard for young children and elderly individuals. Soft chhurpi is generally safe for most consumers.


For raw meat products like kachila: These are not recommended for pregnant women, immunocompromised individuals, young children, or elderly people with weakened immune systems. Kachila should only be consumed when prepared from very fresh, high quality meat and consumed immediately.


For alcoholic beverages like jaanr, tongba, and chhaang: These contain live microorganisms but also alcohol (4 to 8% ABV). Pregnant women should avoid alcohol entirely. Individuals taking medications that interact with alcohol should avoid these beverages. Moderate consumption (one to two glasses) is traditional, but the probiotic benefits do not justify alcohol consumption for individuals who otherwise abstain.


General precautions: Pregnant women, immunocompromised individuals, and infants under one year should consult a physician before adding any new fermented foods to their diet. Individuals on monoamine oxidase inhibitor (MAOI) medications should avoid high amine ferments such as aged sukuti, gnuchi, and long stored gundruk due to potential histamine and tyramine interactions.


Note on Distilled Liquors: Distilled liquors such as raksi are not recommended as probiotic sources. The distillation process destroys all live microorganisms. The prebiotics, probiotics, and most bioactive compounds that are the cornerstone of health foods are removed during distillation. Only non distilled, live fermented beverages like jaanr, tongba, and chhaang retain their microbial content. However, the alcohol content of even these non distilled beverages limits their use as probiotic vehicles.
