A Comprehensive Guide to Probiotic and Fermented Foods of Himachal Pradesh

Himachal Pradesh, meaning "Abode of Snow," is a mountainous state in northern India, nestled in the western Himalayas. It shares borders with Jammu and Kashmir to the north, Ladakh to the northeast, Uttarakhand to the southeast, Haryana and Punjab to the south, and the Tibetan Autonomous Region of China to the east. The state is entirely mountainous, ranging from the Shivalik hills in the south (elevation 350 to 1500 meters) through the mid hills (1500 to 3500 meters) to the Greater Himalayas and the Zanskar range in the north and east (3500 to over 6000 meters). The climate varies dramatically by altitude. The lower Shivalik hills (Kangra, Hamirpur, Una, Bilaspur, Solan, Sirmaur) have a subtropical to temperate climate (classification: Cfa to Cwa), with hot summers (30 to 38 degrees Celsius) and cool winters (4 to 15 degrees Celsius). The mid hills (Mandi, Kullu, Shimla, Chamba, parts of Kinnaur) have a temperate climate (classification: Cwb), with mild summers (20 to 30 degrees Celsius) and cold winters (minus 5 to 10 degrees Celsius), with significant snowfall at higher elevations. The higher Himalayan regions (Lahaul and Spiti, Kinnaur) have a cold desert climate (classification: BWk), with very cold winters (minus 20 to minus 5 degrees Celsius), brief cool summers (10 to 20 degrees Celsius), and very low precipitation. The state receives significant rainfall during the monsoon season (July to September) in the lower and mid hills, but the higher regions (Lahaul, Spiti, upper Kinnaur) are rain shadows and receive very little precipitation.


This extreme mountainous climate has profoundly shaped Himachal's fermentation traditions. Unlike the hot, humid plains of South India or the dry, hot deserts of Rajasthan, Himachal's cold temperatures (especially in winter) mean that spontaneous fermentation is very slow and often unreliable. Therefore, traditional practices rely heavily on starter cultures (called "dhaat" or "maal") that are preserved from previous batches, often for years. The state also has a rich tradition of fermenting grains (barley, buckwheat, millets), dairy products (dahi, ghee, churpi), and even meat and fish (in some tribal communities), reflecting the need for preservation in a climate where fresh food is scarce for months. The state is home to the Himachali people, with a culinary heritage shaped by the diverse communities including the Gaddi (shepherds), Gujjar, Kinnaura, Lahauli, Spitian, Pangwala, and the broader Hindu Rajput and Brahmin populations. The cuisine is predominantly vegetarian in the lower and mid hills, but tribal communities (particularly in Lahaul, Spiti, and Kinnaur) incorporate meat, fish, and dairy ferments as staples due to the harsh climate where vegetable cultivation is limited.


Fermented foods are intrinsic to the traditional diet of Himachal Pradesh. The state is particularly known for its unique fermented grain and buckwheat products (chhang, chulli, babru, siddu), its fermented dairy products (churpi, ghee from cultured butter, dahi), its fermented soybean products (kinema or its regional variants), and its fermented alcoholic beverages (chhang, ghanti, and local grain beers). Unlike the dairy dominated ferments of Punjab and Haryana, Himachal's ferments are more diverse and include many products more commonly associated with the Himalayan region (Nepal, Tibet, Bhutan, Northeast India).


Scientific studies have isolated several probiotic lactic acid bacteria and yeasts from Himachal's fermented foods, including various species of Lactobacillus, Lactococcus, Leuconostoc, Pediococcus, and the yeast Saccharomyces cerevisiae (for alcoholic ferments). The fermented dairy product churpi has been particularly well studied for its probiotic potential and its ability to survive long term storage without refrigeration.


This document organizes the major fermented foods of Himachal Pradesh by substrate type: fermented grain and buckwheat products (including the famous siddu, babru, and chulli), fermented dairy products (including the unique churpi), fermented soybean products, fermented meat and fish products (tribal), fermented beverages (alcoholic and non alcoholic), fermented pickles and condiments, and starter cultures.

Part 1: Fermented Grain and Buckwheat Products


The staple grains of Himachal Pradesh vary by altitude. In the lower hills (Kangra, Hamirpur, Una, Bilaspur, Solan, Sirmaur), wheat, rice, and maize are common. In the mid hills (Kullu, Mandi, Shimla, Chamba), barley (jau), buckwheat (kuttu), amaranth (chulai), and millets (ragi, jowar, bajra) are more common due to their hardiness. In the cold desert regions (Lahaul, Spiti, Kinnaur), barley, buckwheat, and a unique black buckwheat (phaphra) are staples. Fermentation of these grains is essential for making them digestible, enhancing their nutritional value, and producing traditional steamed and fried products.


Siddu (Fermented steamed bread of Himachal Pradesh)


Siddu is arguably the most iconic fermented food of Himachal Pradesh, particularly in the Kullu, Mandi, Shimla, and Kangra regions. It is a steamed, fermented bread made from wheat flour or a mixture of wheat and barley flour. The dough is prepared by mixing flour, water, salt, and a small amount of sour buttermilk (chaas) or yogurt (dahi) as a starter. The dough is left to ferment for 6 to 8 hours (or overnight). In the cold winters (temperatures dropping to minus 5 to 10 degrees Celsius), the dough is placed near the hearth (chulha) or wrapped in a quilt and may take 12 to 16 hours to ferment. The fermentation is driven by LAB from the starter. After fermentation, the dough is shaped into round or oval balls, flattened slightly, and then stuffed with a filling (typically a mixture of mashed boiled potatoes, green chilies, coriander, and spices, or sometimes a sweet filling of jaggery and grated coconut). The stuffed dough balls are then steamed (in a traditional steamer called "siddu steam pot" or in a pressure cooker without the weight) for 15 to 20 minutes. The steaming kills all live microbes, so siddu is not a probiotic food. However, the fermentation enhances digestibility, increases B vitamin content, and reduces antinutrients. Siddu is served hot with ghee (clarified butter), butter (makhan), or a spicy green chutney. It is often eaten as a breakfast item or as a snack with evening tea. Siddu is so central to Kulluvi cuisine that it is often called "Kullu siddu." The fermentation makes the bread soft and spongy, similar to a steamed bun.


Babru (Fermented fried bread of Himachal Pradesh)


Babru is a traditional fermented bread from Himachal Pradesh, particularly in the Kangra and Mandi regions. It is essentially a fermented, deep fried flatbread. The dough is made from black gram flour (urad dal flour) and rice flour, mixed with water, salt, and sour buttermilk (chaas). The dough is left to ferment for 4 to 6 hours. After fermentation, small portions of the dough are flattened into discs (similar to small puris) and deep fried in oil or ghee. Babru is similar to the South Indian "vada" but is distinct in its use of rice flour and its fermentation. The deep frying kills all live microbes. Babru is typically served with a side dish of yogurt (dahi) or with a spicy potato curry (aloo ka jhol). It is a popular breakfast or tea time snack.


Chulli (Fermented buckwheat bread of the Kullu region)


Chulli is a traditional fermented bread made from buckwheat flour (kuttu ka atta), which is naturally gluten free. Buckwheat is a staple grain in the higher elevations of Himachal, particularly in the Kullu and Kinnaur regions. The dough is made from buckwheat flour, water, salt, and a sour starter (buttermilk or yogurt). The dough is left to ferment for 4 to 6 hours. Fermentation is essential for buckwheat dough because unfermented buckwheat dough is hard, dense, and difficult to work with. Fermentation breaks down the starches and makes the dough pliable. After fermentation, the dough is rolled into flatbreads and cooked on a hot griddle (tawa), similar to a roti. Chulli is typically served with ghee, yogurt, or a spicy curry. The cooking kills live microbes.


Fermented Barley Roti (Jau ki Khatti Roti)


In the higher regions of Himachal (Shimla, Kinnaur, Lahaul, Spiti), barley (jau) is a staple grain. Barley flour is mixed with water, salt, and a sour starter (buttermilk or yogurt), and left to ferment for 6 to 8 hours. The fermentation reduces the phytic acid in barley (which is high) and makes the bread softer and more digestible. After fermentation, the dough is rolled into flatbreads and cooked on a griddle (tawa). Barley roti is typically served with ghee, yogurt, or a thick lentil soup (dal). The cooking kills live microbes.


Fermented Buckwheat Noodles (Kinnaur and Lahaul)


In the Kinnaur and Lahaul regions, buckwheat flour is used to make fermented noodles (similar to the Tibetan "thenthuk" or "thukpa" but fermented). The buckwheat dough is fermented for 4 to 6 hours, then rolled out, cut into noodle strips, and cooked in a broth with vegetables or meat. The cooking kills live microbes. This product is extremely rare and is confined to very traditional households.


Fermented Rice (Bhaat ki Kanji or Peej)


In the lower hills (Kangra, Hamirpur, Una, Bilaspur), a fermented rice water and rice grain product similar to the Tamil "seepu" or the Odia "pakhala" is made. Cooked rice is mixed with water and left to ferment overnight (8 to 12 hours). The resulting liquid is consumed as a beverage (kanji or peej), and the rice grains are eaten as a meal, often with salt, green chilies, and raw onions. This is a genuine probiotic food when consumed raw (not reheated). It is particularly common in the summer months and is considered a digestive aid. It should be consumed within 24 hours.

Part 2: Fermented Dairy Products


Himachal Pradesh has a strong dairy tradition, particularly in the lower and mid hills. The Gaddi, Gujjar, and other pastoral communities rear cows, buffaloes, goats, and sheep. However, unlike the plains of Punjab, where fresh dairy is consumed daily, Himachal's cold climate (especially the lack of refrigeration in traditional times) meant that dairy preservation through fermentation was essential. This led to unique products like churpi (hardened fermented cheese) that can be stored for months or even years without refrigeration.


Churpi (Hardened fermented cheese of the Himalayan regions)


Churpi is the most unique and important fermented dairy product of Himachal Pradesh (and neighboring parts of Tibet, Nepal, Bhutan, and Sikkim). It is particularly common in the tribal regions of Lahaul, Spiti, Kinnaur, and the higher reaches of Kullu and Chamba. Churpi is made from cow, buffalo, goat, or yak milk (yak milk is used in Lahaul and Spiti where yaks are reared). The milk is boiled and then fermented with a starter culture (sour buttermilk or whey from a previous batch) to produce dahi (yogurt). The dahi is then churned to separate the butter (makhan). The resulting buttermilk (chaas) is then boiled gently. The milk solids (proteins) coagulate and separate from the whey. These milk solids are collected, drained, and then pressed into blocks or rolled into small balls. The pressed churpi is then hung in a cloth bag to dry for several days. After initial drying, the churpi is smoked (over a wood fire) or sun dried for several weeks to months. The final product is extremely hard, chewy, and has a very long shelf life (years without refrigeration). There are two main varieties: hard churpi (which is chewed like gum) and soft churpi (which is eaten as a cheese). Hard churpi is typically chewed for long periods (like chewing gum) and then either swallowed or discarded. Soft churpi is soaked in water to rehydrate and then added to curries or eaten as a side dish.


The microbial content of churpi is complex. The initial fermentation (making dahi) involves LAB (Lactobacillus delbrueckii subsp. bulgaricus, Streptococcus thermophilus, Lactococcus lactis, Leuconostoc species). During the drying and smoking process, some microbes are killed, but many LAB survive in a dormant state. When churpi is chewed or rehydrated, the LAB can become active again. Churpi is a genuine probiotic food, albeit with a very low moisture content. Studies have isolated several probiotic LAB from churpi, including Lactobacillus plantarum, Lactobacillus casei, and Lactobacillus rhamnosus. Churpi is also rich in protein and calcium. It is consumed as a snack, as a chewing substitute for tobacco (especially in Lahaul and Spiti), and as an ingredient in curries. Pregnant women and individuals with dental issues should exercise caution due to the extreme hardness of churpi (it can damage teeth). Softened churpi (soaked) is safer.


Churpi Nun (Salted fermented cheese of Kinnaur)


In Kinnaur, a salted version of churpi called "churpi nun" is made. Salt is added during the pressing stage, producing a salty, hard cheese. This is used as a condiment or chewed as a snack.


Ghee (Cultured butter ghee)


Traditional Himachali ghee is made from cultured butter, not from fresh cream. Fresh dahi is churned to separate the butter (makhan). The butter is then heated gently to produce ghee. The culturing of the dahi gives the ghee a distinct, nutty, complex flavor. Ghee is not probiotic (heating kills all microbes), but it is nutritionally superior to ghee made from fresh cream. Ghee is used as a cooking medium, as a condiment (drizzled over siddu, chulli, roti, or dal), and in traditional medicine and religious rituals. Himachali ghee from the milk of grass fed cows and buffaloes is highly prized.


Dahi (Curd or Yogurt)


Dahi is prepared in Himachal Pradesh similarly to other Indian states, but the cold climate requires special techniques. Milk is boiled, cooled to lukewarm (40 to 45 degrees Celsius), and inoculated with a starter culture (jaman or khatta dahi). In the cold winters (temperatures dropping below freezing), the inoculated milk is placed in the warmest spot in the house: near the hearth (chulha), inside a quilt (rajai) wrapped pot, or inside the oven with the pilot light. Fermentation may take 12 to 16 hours. Dahi is consumed daily in the lower and mid hills, but less frequently in the higher cold desert regions where fresh milk is scarce. Dahi is a genuine probiotic food.


Makhan (Cultured white butter)


Makhan is the butter that separates from dahi during churning. It is not heated and retains live LAB. Makhan is consumed spread on roti, siddu, or chulli, or mixed into khichdi and dal. It is a probiotic food.


Lassi and Chaas (Fermented buttermilk drinks)


Lassi and chaas are consumed in the lower and mid hills of Himachal Pradesh (Kangra, Hamirpur, Una, Bilaspur, Solan, Mandi, Shimla), similar to Punjab. However, in the higher cold regions (Lahaul, Spiti, Kinnaur), these are less common due to the scarcity of milk and the preference for preserved dairy (churpi).


Kadhi (Fermented yogurt curry)


Kadhi is prepared in the lower and mid hills, similar to the Punjabi and Haryanvi versions. It is made from sour dahi and chickpea flour (besan), tempered with spices and ghee. It is served with rice or khichdi.

Part 3: Fermented Soybean Products


Himachal Pradesh, particularly the tribal regions of Kinnaur, Lahaul, and Spiti, has a tradition of fermenting soybeans, similar to the "kinema" of Sikkim and Nepal and the "hawaijar" of Manipur. This practice is not found in the lower hills and is confined to the higher Himalayan regions where soybeans are cultivated or traded.


Kinema (Fermented soybean in Himachal's tribal regions)


Kinema (also spelled "kinama" or called "bariya" or "akhuni" in other regions) is a fermented soybean product made in the Kinnaur, Lahaul, and Spiti regions. Soybeans are boiled until soft, then drained and cooled. The boiled soybeans are then wrapped in fresh green leaves (typically banana leaves, fig leaves, or rhododendron leaves) and placed in a warm spot (near the hearth) to ferment for 2 to 3 days. The fermentation is driven by Bacillus subtilis, producing a sticky, stringy, pungent, and highly alkaline product (pH 8 to 9). This is a completely different type of fermentation from LAB driven ferments. The product has a characteristic ammonia like smell (similar to strong cheese) and a slimy, sticky texture when fresh. Kinema is used as a condiment, added to curries, or stir fried with vegetables and spices. It is an excellent source of protein and vitamin B12 (which is otherwise rare in vegetarian diets). The cooking (stir frying or boiling) kills the Bacillus subtilis, so the final cooked product is not probiotic. However, fresh, uncooked kinema is a live fermented food. The safety note below applies.


Safety note on kinema: Kinema is produced by Bacillus subtilis, which is generally recognized as safe. However, improper fermentation can lead to contamination with other Bacillus species (including Bacillus cereus, which can cause food poisoning with vomiting and diarrhea). Only kinema from trusted traditional sources should be consumed. Fresh kinema should have a clean, ammonia like smell (not putrid or rotten). A black, green, or pink discoloration indicates mold contamination, and the product should be discarded. Kinema that has an overpowering, foul, or fecal smell should be discarded. Pregnant women and immunocompromised individuals should avoid raw kinema and consume only cooked kinema (the cooking kills the bacteria, making it safe). First time consumers should start with a very small amount (less than 10 grams) to assess tolerance. Kinema is an acquired taste and may cause digestive upset in those not accustomed to it. This product is confined to the tribal regions of Kinnaur, Lahaul, and Spiti and is not commonly found in other parts of Himachal.


Fermented Soybean Balls (Kinnaur)


In Kinnaur, fermented soybean paste is sometimes shaped into small balls and sun dried to produce fermented soybean balls, similar to the "bekang" of Mizoram. The sun drying allows for continued surface fermentation. These balls are stored for months and are rehydrated and added to curries when needed.

Part 4: Fermented Meat and Fish Products (Tribal)


In the higher Himalayan regions (Lahaul, Spiti, Kinnaur), where vegetable cultivation is limited due to extreme cold and short growing seasons, meat and fish are important dietary components. Fermentation is used to preserve meat and fish, similar to the practices in the Northeast Indian states and Tibet.


Fermented Meat (Sudha or Sukha maas)


In Lahaul, Spiti, and Kinnaur, meat (typically goat, mutton, or yak) is preserved through a combination of air drying, smoking, and fermentation. Fresh meat is cut into thin strips, mixed with salt, and sometimes with local spices. The meat is then hung near the hearth (where smoke from the wood fire passes over it) for several weeks to months. The combination of smoke, salt, and low temperatures inhibits spoilage organisms while allowing a slow fermentation by LAB (primarily Lactobacillus species) and surface yeasts. The resulting product, called "sudha" or "sukha maas" (dry meat), is hard, chewy, salty, and smoky. It is rehydrated by boiling or soaking, and then added to curries, soups (thukpa), or eaten as a snack. The cooking kills live microbes. This product is extremely rare and is confined to very remote areas. Pregnant women should avoid due to the high salt content and the theoretical risk of pathogens.


Fermented Fish (Sunga / Bhuna Maas)


In the rivers and streams of Himachal (particularly in the Chenab, Beas, Sutlej, and Ravi river systems), small fish are caught and preserved through fermentation. Fresh fish are cleaned, mixed with salt (a high concentration), and packed into earthen pots or sealed containers. The fish are left to ferment for 7 to 15 days. The high salt concentration selects for halotolerant LAB (Tetragenococcus halophilus, Lactobacillus plantarum). The fish become soft, sour, and intensely salty. Fermented fish (called "sunga" or "bhuna maas") is used as a condiment, added in tiny quantities to rice or dal. The cooking kills live microbes. This product is extremely rare and is confined to very traditional households in remote riverine areas. Pregnant women should avoid fermented fish due to the high salt content and the risk of biogenic amines (histamine) if improperly fermented.

Part 5: Fermented Beverages


Himachal Pradesh has a rich tradition of fermented beverages, both non alcoholic (dairy based) and alcoholic (grain based). The alcoholic beverages (chhang, ghanti, sur) are particularly important in the tribal regions (Lahaul, Spiti, Kinnaur) and are consumed during festivals, social gatherings, and as daily refreshment in the cold climate.


Chhang (Fermented grain beer of the Himalayan regions)


Chhang (also spelled "chang" or "chhaang") is a traditional fermented grain beer (alcoholic beverage) consumed widely in the high Himalayan regions of Himachal (Lahaul, Spiti, Kinnaur), as well as in Tibet, Nepal, Bhutan, Ladakh, and Sikkim. It is made from barley (jau), millet (bajra or ragi), or rice (in lower areas). The process involves soaking the grain, cooking it, spreading it out to cool, and then mixing it with a starter culture called "dhaat" or "phab" (see Part 6). The inoculated grain is packed into a container (earthen pot, bamboo basket, or wooden vessel), covered, and left to ferment for 2 to 5 days. The fermentation is driven by a consortium of yeasts (primarily Saccharomyces cerevisiae, Saccharomyces boulardii, and Candida species) and LAB. After fermentation, the fermented grain is transferred to a vessel, and hot water is poured over it. The liquid (chhang) is then strained and consumed. Chhang is also produced in a second infusion (adding more hot water to the same fermented grain), producing a weaker beverage called "phak chhang" or "second chhang." The alcohol content of chhang is typically 3 to 8 percent, depending on the fermentation time and the number of infusions. Chhang is milky white or pale yellow in color, slightly effervescent, sour, and mildly sweet. It is consumed warm, especially in the cold winter months. Chhang contains live yeasts and LAB, so it is a genuine probiotic beverage (though the alcohol content limits its use as a probiotic). Pregnant women should avoid it entirely. Individuals taking medications that interact with alcohol should also avoid it.


Ghanti (Distilled grain spirit, not probiotic)


Ghanti is a distilled spirit made from chhang or directly from fermented grain. The distillation is done in a traditional pot still. The distilled product has a much higher alcohol content (20 to 40 percent). Ghanti is not probiotic (distillation kills all microbes) and is more dangerous due to the higher alcohol content and the risk of methanol contamination if improperly distilled. This product is not covered further in this guide as it does not contain live microbes.


Sur (Fermented rice beer of the lower hills)


In the lower hills of Himachal (Kangra, Mandi, Hamirpur, Una, Bilaspur), a fermented rice beer called "sur" is traditionally made. Cooked rice is mixed with a starter culture (similar to dhaat) and left to ferment for 3 to 5 days. The resulting semi solid or liquid product is consumed as a beverage. Sur is lower in alcohol than chhang (2 to 5 percent) and is often consumed as a family beverage during festivals and harvest celebrations. The alcohol content is lower, but pregnant women should still avoid it.


Fermented Rice Water (Bhaat ki Kanji or Peej, already covered in Part 1)


This non alcoholic, lactic acid fermented beverage is also consumed as a drink.


Jhol (Fermented buttermilk soup)


In the lower and mid hills, a thin, sour, fermented buttermilk soup called "jhol" is consumed. It is made by diluting chaas with water, adding a small amount of chickpea flour (besan) and spices, and then simmering gently (not boiling). It is similar to kadhi but thinner. It is consumed as a beverage or as a soup with rice.

Part 6: Starter Cultures and Fermentation Vessels


Himachal's cold climate and reliance on specific ferments have produced unique starter cultures and vessels not found in the plains.


Dhaat / Phab (Traditional starter culture for grain beers)


Dhaat (also called "phab" in some regions, particularly in Kinnaur and Spiti) is a traditional starter culture used for making chhang, sur, and other grain based alcoholic ferments. It is a dried, solid cake or powder made from a mixture of ground grains (rice, barley, millet), wild herbs and roots (which contain yeasts and LAB and also have antimicrobial properties), and a small amount of previous batch of dhaat (back slopping). The mixture is formed into small cakes and dried in the sun or near the hearth. These starter cakes are stored for months or years. When needed, a dhaat cake is ground and mixed with cooked grain to initiate fermentation. The microbial consortium in dhaat includes Saccharomyces cerevisiae (yeast), various LAB (Lactobacillus, Leuconostoc), and sometimes Mucor or Rhizopus (molds that produce amylase enzymes to break down starches). Dhaat is analogous to the "murcha" or "bubod" starters of Nepal and the "pulu" starter of the Naga tribes. The exact composition of dhaat varies by household and is a closely guarded family secret. Dhaat is a classic example of a complex, mixed species starter culture. This practice is confined to the tribal regions (Lahaul, Spiti, Kinnaur, and parts of Kullu and Chamba).


Jaman or Khatta Dahi (Sour curd starter for dairy)


As in other North Indian states, Himachali households (particularly in the lower and mid hills) maintain a reserved sour curd starter called "jaman" or "khatta dahi" to inoculate fresh milk. This starter is kept alive for years.


Buttermilk (Chaas) as a starter for grain ferments


For non alcoholic grain ferments (siddu, babru, chulli, barley roti), sour buttermilk (chaas) or sour yogurt (dahi) is used as the starter culture.


Earthen pots (Matka, Handi, Ghada)


Earthen pots are used for fermenting dahi, storing churpi, and fermenting grain batters. In the cold winters, these pots are wrapped in quilts or placed near the hearth.


Wooden and bamboo vessels (Thok, Chhap, Dungkhar)


In the tribal regions, traditional vessels made from wood (hollowed logs) and bamboo (woven baskets) are used for fermenting chhang, sur, and kinema. The wood and bamboo retain resident microbial biofilms that contribute to the fermentation. These vessels are often not washed with soap (only rinsed with water) to preserve the microbial community. A large wooden barrel used for fermenting chhang is called a "thok" or "chhap" in Lahaul and Spiti. A bamboo basket lined with leaves for fermenting kinema is still used in Kinnaur.


Stone vessels (In cold desert regions)


In Lahaul and Spiti, stone vessels (carved from river stones or soft rock) are sometimes used for fermenting dahi or storing churpi. The stone provides insulation and maintains a stable temperature in the extreme cold.

Leaves (freshly picked) are used as wraps for fermenting kinema (soybean). Rhododendron leaves are particularly prized in Kinnaur because they are believed to impart a desirable flavor and may have antimicrobial properties that select for the desired Bacillus subtilis.

Final Safety and Consumption Note


While traditional fermented foods of Himachal Pradesh offer significant nutritional and probiotic benefits, several safety considerations specific to the state's mountainous terrain, cold climate, and unique tribal ferments should be noted.


For fermented grain and buckwheat products (siddu, babru, chulli, barley roti, fermented buckwheat noodles, fermented rice water): Siddu, babru, chulli, barley roti, and buckwheat noodles are cooked (steamed, deep fried, griddled, or boiled), which kills all live microorganisms. They are safe for everyone, including pregnant women, infants, and immunocompromised individuals. Fermented rice water (bhaat ki kanji/peej) is a live, probiotic beverage when consumed raw. It should be consumed within 24 hours of preparation. Only consume if it has a clean, sour smell (like yogurt) and no visible mold or slime. Pregnant women and immunocompromised individuals should exercise caution with raw fermented rice water. Dough that has fermented for too long (more than 10 hours in summer, more than 20 hours in winter) may become excessively sour (vinegar like) or develop off flavors. A putrid smell, visible mold (green, black, pink), or slimy texture indicates spoilage, and the dough should be discarded.


For dairy products (churpi, dahi, makhan, ghee, lassi, chaas, kadhi): Churpi is a unique product. Hard churpi is extremely hard and can damage teeth; individuals with dental issues (cavities, crowns, bridges, dentures) should avoid chewing hard churpi. Soft churpi (soaked in water) is safer. Churpi is generally safe for healthy individuals. Pregnant women can consume soft churpi but should avoid hard churpi due to the choking hazard and dental risk. Dahi, makhan, lassi, and chaas are genuine probiotic foods when consumed live (not heated). They are generally safe for healthy individuals and pregnant women. Kadhi, if gently heated (not boiled), retains some probiotics and is safe. Ghee is not probiotic but is safe. Dahi that has been stored for more than 5 to 7 days, or that shows signs of mold, should be discarded.


For fermented soybean products (kinema, fermented soybean balls): Kinema is produced by Bacillus subtilis. Only consume from trusted traditional sources. Fresh kinema should have a clean, ammonia like smell (similar to strong cheese). A black, green, or pink discoloration indicates mold contamination. An overpowering, foul, or fecal smell indicates spoilage. Discard immediately. Pregnant women and immunocompromised individuals should avoid raw kinema and consume only cooked kinema (the cooking kills the bacteria, making it safe). First time consumers start with a very small amount (less than 10 grams). Kinema is an acquired taste and may cause digestive upset (gas, bloating, diarrhea) in those not accustomed to it. Do not consume kinema if you are allergic to soy.


For fermented meat and fish products (sudha/sukha maas, sunga/bhuna maas): These products are extremely rare and are confined to remote tribal areas. They are not recommended for general consumption. For those consuming from trusted traditional sources, ensure the meat or fish has been properly salted and smoked. A putrid, rotten, or fecal smell indicates spoilage. A slimy texture or black/green mold indicates spoilage. Discard. Pregnant women should avoid these products entirely due to the high salt content and the risk of pathogens (including Clostridium botulinum in improperly fermented meat). Immunocompromised individuals should avoid them entirely.


For fermented beverages (chhang, sur, jhol, bhaat ki kanji): Chhang and sur are alcoholic beverages (alcohol content 2 to 8 percent). Pregnant women should avoid them entirely. Individuals on medications that interact with alcohol should also avoid them. Individuals with liver disease, pancreatitis, or a history of alcohol abuse should avoid them. Only consume chhang and sur from trusted traditional sources. Adulteration with industrial alcohol (methanol) has been reported in some illicitly produced country liquor; never consume from unknown or unverified sources. Jhol (fermented buttermilk soup) is non alcoholic (alcohol below 0.5 percent) and safe for everyone, including pregnant women. Bhaat ki kanji is also non alcoholic and safe, but see the note above about raw fermented rice water.


For individuals on monoamine oxidase inhibitor (MAOI) medications: Aged products such as long fermented churpi (aged for more than 6 months) and long fermented kinema may contain elevated levels of tyramine. These individuals should avoid aged fermented foods or consult their physician. Freshly fermented products (fresh dahi, fresh kinema (cooked), fresh chhang (in small amounts, but alcohol interactions are a separate concern)) have lower tyramine levels.


For general consumers: Start with small quantities of any new fermented food to assess individual tolerance. Fermented foods are generally safe for healthy individuals. Pregnant women, immunocompromised individuals, and infants under one year should consult a physician before adding significant quantities of live fermented foods (raw dahi, raw lassi, raw chaas, raw makhan, raw kinema, raw fermented rice water) to their diet. For cooked fermented products (siddu, babru, chulli, barley roti, cooked kinema, cooked churpi, kadhi, jhol), no consultation is needed as these are safe for everyone (with the exception of hard churpi for dental issues).


Note on Commercial Products: Many of the products described in this guide (siddu, babru, chulli, churpi, kinema, chhang) are not commercially available in processed, pasteurized forms. They are traditional, homemade products. If you encounter these products commercially (e.g., packaged churpi in tourist markets), they may be pasteurized or may have reduced probiotic content. For probiotic benefits, traditional, fresh, or homemade products are required. For churpi, look for traditionally prepared, sun dried or smoked churpi. For chhang, only fresh (within 2 to 3 days of fermentation) contains live microbes; commercially bottled chhang may be pasteurized.


Note on Altitude and Fermentation: At high altitudes (above 2500 meters in Lahaul, Spiti, and Kinnaur), the lower atmospheric pressure and lower oxygen levels affect fermentation. Water boils at a lower temperature (approximately 90 to 95 degrees Celsius at 3000 meters), which may not be sufficient to fully sterilize equipment. LAB and yeast fermentation proceeds more slowly at low temperatures, but the low oxygen environment (especially in sealed containers) favors LAB. Traditional practices have adapted to these conditions by using larger amounts of starter culture, longer fermentation times, and the use of warm spots (near the hearth) for longer periods.


Note on Churpi and Dental Health: Churpi is extremely hard. Chewing churpi can cause tooth fractures, damage to dental fillings, and jaw fatigue. Individuals with dental crowns, bridges, implants, dentures, or braces should avoid chewing hard churpi. Soft churpi (soaked in water for several hours or overnight) is safe. Churpi is sometimes used as a natural tooth cleaner (the chewing action stimulates gums and removes plaque), but this should only be done by individuals with healthy, natural teeth.
