A Comprehensive Guide to Probiotic and Fermented Foods of Gujarat

Gujarat, a state in western India, has a long coastline along the Arabian Sea (the Saurashtra and Kutch regions) and shares borders with Rajasthan, Madhya Pradesh, and Maharashtra. The state has a tropical savanna and desert climate with distinct seasonal variations. Unlike the consistently humid climates of Tamil Nadu, Kerala, and coastal Karnataka, Gujarat ranges from arid in the north and northwest (Kutch, Banaskantha, Patan) to semi arid in the central region (Saurashtra, Ahmedabad, Rajkot) to slightly more humid along the southern coast (Valsad, Navsari, Surat). The climate is characterized by hot summers (April to June) with temperatures reaching 40 to 45 degrees Celsius, a monsoon season (July to September) with moderate to high rainfall (500 to 1500 millimeters, varying dramatically by region), and mild winters (December to February) with temperatures from 10 to 25 degrees Celsius.


This climate strongly influences fermentation practices. The extreme summer heat requires rapid fermentation or the use of cool, indoor spaces. The arid and semi arid regions have lower ambient humidity, which affects spontaneous fermentation (lower humidity means lower airborne microbial loads) and necessitates the use of specific starter cultures (such as leftover batter, whey, or buttermilk) rather than relying on environmental microbes. Gujarat is also home to a predominantly vegetarian population, with Jains (who avoid root vegetables and certain ferments), Vaishnavas, and other Hindu communities. The state is one of India's largest milk producers, and dairy fermentation is exceptionally prominent. Fermented grain and legume batters are also central, but with unique variations.


The state is home to the Gujarati people, with a culinary heritage shaped by the communities including the Patidar, Koli, Rabari, Brahmin, Jain, and the significant diaspora. Fermented foods are intrinsic to the daily Gujarati diet, but with a distinct profile that emphasizes mild sourness (the Gujarati palate has a well known preference for a balance of sweet and sour), dairy based ferments (chaas, kadhi), and fermented lentil and grain batters (handvo, dhokla, khaman, idra).


Scientific studies have isolated several probiotic lactic acid bacteria from Gujarat's fermented foods, including various species of Lactobacillus, Lactococcus, Leuconostoc, Pediococcus, and Enterococcus. Gujarat is particularly known for its traditional fermented milk products (kadhi, chaas, shrikhand, mattha, ghol, tuvar dahi) that are consumed live and are genuine probiotic foods.

Part 1: Fermented Lentil and Grain Batters (Steamed and Baked Products)


Gujarat is famous across India for its fermented, steamed savory cakes collectively known as dhokla and khaman. Unlike the rice and black gram batters of South India, Gujarat's batters are typically based on chickpea flour (besan), Bengal gram (chana dal), pigeon pea (tuvar dal), and various lentils, often with the addition of sour buttermilk (chaas) as a starter culture.


Dhokla (Traditional Khaman Dhokla)


Dhokla is arguably the most famous fermented food of Gujarat, recognized throughout India. The traditional dhokla (also called khaman dhokla) is made from a batter of bengal gram (chana dal) or chickpea flour (besan). The dal is soaked for 4 to 6 hours, then ground into a coarse paste with green chilies, ginger, and salt. A small amount of sour buttermilk (chaas) or yogurt is added as a starter culture. The batter is left to ferment for 6 to 8 hours. In the hot summer months (40 to 45 degrees Celsius), fermentation may complete in 4 to 5 hours; in winter (10 to 20 degrees Celsius), the batter is placed in a warm oven or near a heat source and may take 10 to 12 hours. The fermentation is driven by lactic acid bacteria (Lactobacillus species, Leuconostoc species) and yeasts present in the buttermilk and the environment. The fermentation produces carbon dioxide, which leavens the batter, and lactic acid, which gives dhokla its characteristic tangy flavor. After fermentation, the batter is poured into a greased thali (flat pan) and steamed for 15 to 20 minutes. The steamed cake is then cut into squares, tempered with mustard seeds, curry leaves, green chilies, and a small amount of sugar dissolved in water, and garnished with fresh coriander and grated coconut.


Dhokla is light, fluffy, yellow, spongy, and mildly sour with a hint of sweetness from the tempering. The steaming step kills all live microorganisms, so dhokla is not a probiotic food. However, the fermentation dramatically improves digestibility, increases B vitamin content (particularly riboflavin and niacin), and reduces antinutrients. Dhokla is typically served as a breakfast item, evening snack, or as part of a festive thali. It is served with green chutney (coriander and mint) and tamarind chutney. The nutritional enhancement from fermentation is so significant that dhokla is considered a healthy, light snack, often recommended for weight management and diabetic diets.


Khaman


Khaman is very similar to dhokla but is made exclusively from chickpea flour (besan) and is typically lighter, fluffier, and more yellow. The batter uses besan, sour buttermilk (chaas) or yogurt, green chilies, ginger, and a small amount of citric acid (or lemon juice) to enhance sourness. A small amount of baking soda (fruit salt or eno) is often added just before steaming to increase the leavening, though traditional versions rely solely on fermentation. The fermentation period is 6 to 8 hours. Khaman is steamed in the same manner as dhokla. The tempering for khaman is similar but often includes more sugar, giving it a distinctly sweet sour flavor profile that is quintessentially Gujarati. Like dhokla, the steaming kills live microbes, but the nutritional benefits of fermentation remain. Khaman is often served with sev (crispy chickpea noodles) on top and is a staple of Gujarati street food.


Handvo (Fermented lentil and vegetable cake)


Handvo is a unique Gujarati fermented snack that is more substantial than dhokla. It is made from a mixture of lentils (chana dal, moong dal, tuvar dal) and rice, soaked and ground into a coarse batter. The batter is mixed with sour buttermilk (chaas) and left to ferment for 8 to 12 hours. After fermentation, grated vegetables (bottle gourd (dudhi), carrots, cabbage, and sometimes spinach), ginger, green chilies, spices, and a small amount of sugar or jaggery are added. The thick batter is then poured into a greased baking dish and baked in an oven (traditional preparation used a wood fired oven or a heavy pan on low heat, covered with coals on the lid) until golden brown and crispy on the outside, soft on the inside.


Handvo has a savory, slightly sour, complex flavor. It is typically cut into wedges or squares and served as a breakfast item, tea time snack, or packed lunch. The baking step kills all live microbes, so handvo is not a probiotic food. However, the fermentation enhances nutrient bioavailability and digestibility. Handvo is a complete meal in itself, providing protein from the lentils, fiber from the vegetables, and energy from the rice. It is particularly popular among the Patidar and Koli communities of central Gujarat (Ahmedabad, Kheda, Anand).


Idra (Fermented rice and lentil idli style cake)


Idra is the Gujarati version of idli, distinct from the Tamil idli. It is made from rice, chana dal (bengal gram), and urad dal (black gram). The rice and dals are soaked separately, then ground into a batter with sour buttermilk (chaas) or yogurt. The batter is fermented overnight for 8 to 10 hours. The fermentation is driven by LAB from the buttermilk. The batter is then poured into small, greased bowls or cups and steamed. The resulting idra is similar to South Indian idli but has a different flavor profile (more tangy, less neutral) and a slightly coarser texture due to the chana dal. Idra is served with sambar and chutney, or with a simple tempering of mustard seeds and curry leaves. The steaming kills live microbes.


Dokhli / Muthia (Fermented steamed dumplings)


Dokhli (also called muthia or steamed dumplings) are made from a fermented batter of chickpea flour (besan), whole wheat flour, and grated bottle gourd (dudhi) or cabbage. The flour mixture is mixed with sour buttermilk (chaas), green chilies, ginger, spices, and a small amount of oil. The mixture is left to ferment for 4 to 6 hours. After fermentation, the dough is shaped into small cylindrical or oval dumplings (muthia) and steamed. The steamed dumplings are then sliced and can be eaten as is, or lightly sautéed with mustard seeds, sesame seeds, and curry leaves. The fermentation improves digestibility and reduces gas producing compounds from the chickpea flour. The steaming kills live microbes. Dokhli is served as a snack or as a side dish with tea.


Patra / Alu Vadi (Fermented colocasia leaf rolls)


Patra (also known as alu vadi in Maharashtra) is a unique fermented dish made from colocasia (taro) leaves (Colocasia esculenta). The large, heart shaped leaves are spread flat, and a fermented batter of chickpea flour (besan), tamarind paste (or lemon juice), jaggery (or sugar), ginger, green chilies, and spices is spread over the leaves. The leaves are then rolled tightly into a log and steamed. The steamed roll is sliced into rounds (pinwheels) and then lightly pan fried. The fermentation of the besan batter occurs before spreading on the leaves. The batter is mixed with sour buttermilk or yogurt and left to ferment for 4 to 6 hours. The fermentation reduces the bitterness of the colocasia leaves (which contain calcium oxalate crystals that can irritate the mouth and throat) and improves digestibility. The steaming and frying kill all live microbes. Patra is a popular snack in Gujarat, particularly during the monsoon season.

Part 2: Fermented Dairy Products


Gujarat has the most diverse and prominent fermented dairy tradition in India. The state is home to the Amul cooperative (Anand, Gujarat), which revolutionized dairy production in India. Fermented milk products are consumed daily in every Gujarati household, often multiple times per day. Unlike South India, where curd is often a final course, in Gujarat fermented dairy is integrated into the meal as a beverage (chaas, mattha), a curry (kadhi), a dessert (shrikhand), and a cooking medium.


Chaas (Spiced buttermilk)


Chaas (also called chaach, chhachh) is the Gujarati name for spiced buttermilk. It is arguably the most consumed fermented beverage in Gujarat, drunk daily by millions. Chaas is prepared by churning fresh curd (dahi) to break the gel structure and separate the butter. The resulting buttermilk is diluted with water (typically a 1:2 or 1:3 ratio of curd to water) and seasoned with salt, roasted cumin powder (jeera powder), finely chopped green chilies, ginger, coriander leaves, and sometimes asafoetida (hing). The Gujarati version is thinner, more watery, and less sour than the South Indian neer mor or sambharam. It is consumed as a refreshing beverage with lunch and dinner, and is considered essential for digestion, especially after a heavy meal. Chaas contains live lactic acid bacteria, primarily Lactococcus lactis, Lactobacillus delbrueckii subsp. bulgaricus, and Leuconostoc species. It is low in fat (if the butter is removed), low in calories, and rich in probiotics, B vitamins, and calcium. Chaas is also used as a starter culture for other ferments (dhokla, khaman, handvo). In the extreme summer heat of Gujarat, chaas is also used to prevent dehydration and heat stroke. Traditional Gujarati households serve chaas in a metal glass (often copper, which has antimicrobial properties) and drink it throughout the day.


Mattha / Ghol (Sweet or salted fermented buttermilk)


Mattha (also called ghol in some regions) is a variation of chaas. It is prepared similarly from churned curd, but mattha is typically sweeter and less spiced. The curd is churned, diluted with water, and then mixed with a small amount of sugar (or jaggery) and a pinch of salt. Sometimes roasted cumin powder or black salt (kala namak) is added. Mattha is often consumed by children and the elderly, as the mild sweetness makes it more palatable. In the Saurashtra region, mattha is also made with a small amount of crushed mint leaves. Like chaas, mattha contains live probiotics.


Dahi (Curd or Yogurt)


Dahi is the Gujarati name for fermented milk curd, equivalent to Tamil thayir and Kannada mosaru. It is prepared by boiling fresh cow or water buffalo milk, cooling to lukewarm (40 to 45 degrees Celsius), and inoculating with a starter culture from a previous batch of dahi (back slopping). The fermentation is driven by Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus, along with mesophilic LAB. Gujarati dahi is often set in earthen pots (called matlu or handa). In the summer heat (40 to 45 degrees Celsius), dahi sets in 4 to 5 hours. In winter (10 to 15 degrees Celsius), the milk is inoculated with a larger amount of starter and placed in a warm spot (inside the oven with the pilot light, or wrapped in a blanket). Dahi is consumed daily, either plain, mixed with rice (dahi bhat, equivalent to curd rice), or used to make chaas, kadhi, and shrikhand. Dahi is a genuine probiotic food when consumed live.


Kadhi (Fermented yogurt curry)


Kadhi is a traditional Gujarati curry made from fermented sour curd (dahi) and chickpea flour (besan). It is one of the most important dishes in Gujarati cuisine, served as part of the daily thali. Sour dahi (dahi that has fermented for 2 to 3 days, becoming more acidic) is whisked with besan, water, ginger paste, green chilies, and a small amount of turmeric and asafoetida. The mixture is then heated gently, stirring continuously to prevent curdling. A tempering of mustard seeds, cumin seeds, fenugreek seeds, curry leaves, dried red chilies, and sometimes ghee is added. The result is a thick, golden yellow, tangy, mildly spicy curry. Unlike South Indian moru curries, Gujarati kadhi is sweetened with a small amount of sugar or jaggery, creating the characteristic sweet sour balance of Gujarati cuisine.


The heating step in kadhi preparation is significant. If the curry is boiled vigorously, the live LAB will be killed. However, if the kadhi is heated only to a simmer (below 50 degrees Celsius) and not boiled, a portion of the probiotic bacteria survive. Traditional preparation methods often emphasize gentle heating, preserving some live microbes. Kadhi is served with rice (kadhi bhat) or with khichdi. In the winter months, kadhi is often made with fenugreek leaves (methi kadhi).


Shrikhand (Fermented sweetened strained yogurt)


Shrikhand is a unique Gujarati dessert made from strained, fermented yogurt. It is prepared by hanging fresh dahi (curd) in a muslin cloth overnight (6 to 8 hours) to drain the whey. The resulting thick, cream cheese like substance is called "chakka" or "shrikhand base." This base is then mixed with powdered sugar (or jaggery), cardamom powder (elaichi), saffron strands (kesar), and sometimes chopped nuts (pistachios, almonds). The mixture is whisked until smooth and creamy. The chakka retains live LAB (though the population decreases somewhat during draining). Shrikhand is a genuine probiotic dessert, rich in protein and probiotics. It is served chilled as a dessert or as part of a festive thali. Shrikhand is also made with mango puree (amrakhand) during the mango season (April to June). In Gujarat, shrikhand is almost always served with poori (deep fried flatbread) as a special meal. The probiotic content of shrikhand varies depending on the freshness of the base; freshly made shrikhand (within 24 hours of draining) has higher live counts.


Lassi (Gujarati style sweet fermented buttermilk)


While lassi is more famously associated with Punjab, Gujarat has its own version. Gujarati lassi is a sweet, thick fermented buttermilk beverage. Fresh dahi (curd) is churned with water, sugar, and sometimes a small amount of rose water or cardamom powder. The result is a thick, creamy, sweet, slightly tangy beverage. Unlike the Punjabi lassi, which is often very thick and served as a meal replacement, Gujarati lassi is lighter and sweeter. It contains live LAB and is a probiotic beverage. Lassi is consumed as a drink with meals or as a refreshing beverage on hot summer afternoons.


Tuvar Dahi (Camel milk curd)


In the arid and semi arid regions of Gujarat (Kutch, Banaskantha, Patan), where camel rearing is common, a unique fermented product called tuvar dahi (camel milk curd) is made. Camel milk does not coagulate as easily as cow or buffalo milk due to differences in protein composition (lack of beta lactoglobulin and different casein micelle structure). Traditional preparation involves boiling camel milk, cooling, and inoculating with a large amount of starter culture (from cow milk curd) and sometimes adding a small amount of buttermilk or lemon juice to assist coagulation. The fermentation takes longer (12 to 16 hours) and produces a thinner, more acidic curd. Camel milk curd has been studied for its probiotic properties, particularly its potential to improve insulin sensitivity and manage blood sugar. The LAB involved include Lactobacillus acidophilus, Lactobacillus plantarum, and various thermophilic species. Tuvar dahi is consumed in the Kutch region by the Rabari and other pastoral communities. It is a genuine probiotic food. The high vitamin C and iron content of camel milk (higher than cow milk) are preserved and enhanced by fermentation.


Kefir (Traditional variation in tribal Gujarat)


In the tribal communities of eastern Gujarat (Chhota Udaipur, Dangs, Surat district), a traditional fermented milk product similar to kefir is made. Fresh cow or goat milk is fermented in a goatskin bag (or earthen pot) with a starter culture from a previous batch. The fermentation involves a symbiotic consortium of LAB and yeasts, including Lactobacillus kefiri, Saccharomyces kefir, and Kluyveromyces marxianus. The resulting product is effervescent, slightly alcoholic (0.5 to 1 percent alcohol), and sour. This traditional kefir is consumed as a probiotic beverage. It is known by local names such as "noi" or "dudh no varaso." This product is extremely rare and is not commercially available. Pregnant women should avoid it due to the alcohol content.

Part 3: Fermented Pickles and Condiments


Gujarat's pickling tradition shares similarities with the rest of western India but has unique products, particularly the use of lemon, lime, green chilies, and garlic, with a distinct sweet sour balance.


Limbu Achar (Fermented lime pickle)


Limbu achar is the Gujarati fermented lime pickle, equivalent to other Indian lime pickles. Whole or quartered limes (limbu) are mixed with salt (15 to 20 percent), chili powder, asafoetida, fenugreek powder (methi), and a small amount of sugar or jaggery (a distinctly Gujarati addition). The mixture is packed into a ceramic or glass jar and left to ferment in the sun for 15 to 30 days. The sugar promotes LAB fermentation and balances the sourness. The primary fermenting organisms are halotolerant LAB, including Lactobacillus plantarum, Pediococcus pentosaceus, and Tetragenococcus halophilus. Limbu achar is served as a condiment with rice, khichdi, and dal bhat. The sweet sour spicy flavor profile is quintessentially Gujarati.


Gulab ni Kari (Sweet fermented lime pickle)


Gulab ni kari is a unique Gujarati pickle. It is made from limes (limbu) fermented with a very high proportion of jaggery (gulab means rose, referring to the reddish brown color imparted by jaggery). The limes are slit, packed with jaggery, salt, and spices, and left to ferment for 20 to 30 days. The result is a sweet, sour, spicy, and intensely flavorful pickle. Gulab ni kari is served in tiny quantities as a condiment. It is particularly popular during weddings and festivals.


Lasan ni Chutney (Fermented garlic chutney)


Lasan (garlic) ni chutney is a fermented garlic chutney from the Saurashtra and Kutch regions. Fresh garlic cloves are crushed with salt, chili powder, and a small amount of lemon juice, then packed into a jar and left to ferment for 5 to 7 days. The fermentation is driven by LAB present on the garlic. The resulting chutney is intensely pungent, salty, and sour. It is consumed in tiny quantities as a condiment with khichdi, rice, or rotla (millet flatbread). Garlic chutney has strong antimicrobial properties due to allicin (which degrades during fermentation, reducing the pungency). This product is not common among Jains (who avoid garlic) but is popular among other communities. The high salt content limits consumption.


Rawaiya (Fermented mustard greens pickle)


Rawaiya is a traditional fermented pickle made from mustard greens (rai or sarson) in the northern regions of Gujarat (Palanpur, Banaskantha, Mehsana), which share a border with Rajasthan. Fresh mustard greens are chopped finely, mixed with salt, chili powder, turmeric, and sometimes lemon juice, and packed into an earthen jar. The mixture is left to ferment for 10 to 15 days. The fermentation is driven by LAB. The resulting pickle is sour, salty, and pungent (from the mustard). Rawaiya is served with rice or bajra (pearl millet) rotla. This product is similar to the Punjabi "sarson ka saag" but the Gujarati version is fermented and more sour.


Chunda (Sweet and sour fermented mango shreds)


Chunda is a unique Gujarati condiment that is both fermented and sweet. Unlike the salt dominant pickles of South India, chunda is made from raw mango shreds (kacha keri) mixed with a very high proportion of sugar (or jaggery), salt, and spices (cumin, fenugreek, chili powder). The mixture is packed into a jar and left to ferment in the sun for 15 to 20 days. The fermentation is driven by LAB, but the high sugar content creates a different microbial environment (high osmotic pressure). The result is a sweet, sour, spicy, slightly tangy, and intensely flavorful condiment with a syrupy consistency. Chunda is served as a condiment with theplas, khichdi, rice, and snacks like dhokla and khaman. It is a staple in every Gujarati household. The high sugar content limits the quantity consumed, but chunda does contain live LAB. It is typically stored for several months without refrigeration due to the combined effects of high sugar, salt, and acidity.

Part 4: Fermented Beverages


Gujarat has a unique fermented beverage tradition that includes dairy based drinks (chaas, lassi, mattha) and non dairy drinks, but alcoholic fermented beverages are rare due to the state's prohibition laws (Gujarat is a dry state where the sale and consumption of alcohol is legally restricted, though some tribal communities have traditional fermentations).


Kanjhi (Fermented carrot beverage)


Kanjhi is a traditional fermented beverage from Gujarat, similar to the Punjabi "kanji" but with regional variations. Black carrots (or standard red carrots) are peeled, cut into pieces, and mixed with water, salt, mustard powder (rai), and asafoetida. The mixture is left to ferment in a glass or ceramic jar in the sun for 3 to 5 days. The fermentation is driven by LAB, primarily Lactobacillus plantarum and Leuconostoc species, and also by the action of enzymes from the mustard powder (which has some antimicrobial properties). The resulting kanjhi is a sour, spicy, effervescent, pinkish red (from the carrots), slightly salty beverage. It is consumed as a digestive drink, often after a heavy meal. Kanjhi is also used as a base for other dishes. The carrot pieces are also eaten as a pickle. Kanjhi is a genuine probiotic beverage. It is particularly popular during the winter months (December to February), when black carrots are in season. The fermentation reduces the sugar content of the carrots (which are naturally sweet), producing a beverage that is lower in sugar than fresh carrot juice.


Jalebi (Fermented sweet batter, not a beverage but relevant)


Jalebi, the iconic Indian sweet, is made from a fermented batter of all purpose flour (maida), yogurt (dahi), and sometimes a small amount of gram flour (besan). The batter is left to ferment for 12 to 24 hours. The fermentation is driven by LAB from the yogurt. After fermentation, the batter is poured through a small hole into a spiral shape into hot oil and deep fried. The fried spirals are then soaked in sugar syrup. The deep frying and sugar soaking kill all live microbes. Jalebi is not a probiotic food, but the fermentation contributes to its characteristic tangy flavor and light, crispy texture. Gujarat is particularly famous for its jalebi, often served with fafda (a savory snack) during festivals like Dussehra.


Samoso (Fermented drink of tribal communities)


In the tribal communities of eastern Gujarat (Chhota Udaipur, Dangs), a traditional fermented beverage called "samoso" is made from fermented rice or millet. Cooked rice (or ragi, finger millet) is mixed with water and left to ferment in an earthen pot for 2 to 3 days. The fermentation is driven by LAB and wild yeasts. The resulting beverage is sour, slightly effervescent, and has a low alcohol content (0.5 to 1.5 percent, but can be higher if yeast dominates). Samoso is consumed as a refreshing drink and is also used in religious rituals. Due to the alcohol content (even if low), and Gujarat's prohibition laws, this product is not widely available and is confined to remote tribal areas. Pregnant women should avoid it.

Part 5: Other Fermented Foods


Khari (Fermented lentil wafers)


Khari (also called papad or appalam in other states) is a traditional fermented wafer made from lentil flour (urad dal, moong dal, or chana dal). The lentil flour is mixed with water, salt, and a small amount of baking soda (or leftover fermented batter) to form a stiff dough. The dough is left to ferment for 4 to 6 hours. After fermentation, the dough is rolled into thin rounds (or shaped by hand) and sun dried. The sun drying (which can take 1 to 3 days) allows for continued surface fermentation by halotolerant LAB and yeasts. The dried khari is then stored. Before eating, khari is deep fried, roasted over an open flame, or microwaved. The high heat kills live microbes, but the fermentation enhances digestibility and reduces flatulence causing oligosaccharides in the lentils. Khari is served as a condiment, snack, or accompaniment to meals.


Sak (Fermented bamboo shoot of tribal Gujarat)


In the tribal communities of the Dangs and Surat districts (which share a border with Maharashtra and the Western Ghats), fermented bamboo shoots are prepared, similar to the Kodava tradition in Karnataka. The bamboo shoots are sliced, mixed with salt, and fermented in an earthen pot for 7 to 15 days. The fermented shoots, called "sak" or "sag," are used as a condiment or added to curries. Part 6: Starter Cultures and Fermentation Vessels


Earthen pots (Matlu or Handa)


Traditional Gujarati households ferment dahi (curd) and store fermented batters in unglazed earthen pots called matlu or handa. The porous inner surface retains a biofilm of LAB from previous batches, acting as a passive starter culture. In the extreme summer heat of Gujarat, earthen pots are often kept in a cool, dark corner of the kitchen, or are wrapped in wet cloth to reduce temperature through evaporative cooling. This traditional practice allows fermentation to proceed at a controlled rate even when ambient temperatures exceed 40 degrees Celsius.


Buttermilk (Chaas) as a starter


Unlike Tamil Nadu, where batter fermentation relies entirely on spontaneous fermentation (from the grinding stone and environment), Gujarat almost always uses a starter culture, typically sour buttermilk (chaas) or yogurt (dahi). The chaas provides a consistent inoculum of LAB (Lactococcus lactis, Lactobacillus delbrueckii subsp. bulgaricus, Streptococcus thermophilus), reducing the risk of spoilage and standardizing the fermentation outcome. This practice is essential in the arid and semi arid regions of Gujarat, where airborne microbial loads are lower than in humid coastal regions.


Kadiya (The sour curd starter)


Kadiya is the Gujarati term for the reserved, sour curd starter used to inoculate fresh milk. A small amount of kadiya (the previous batch of dahi) is saved in a small earthen pot and stored in a cool place. Kadiya becomes progressively more sour as it ages (due to continued LAB activity). This aged, sour starter is considered the best for making kadhi (sour yogurt curry). Kadiya is also used as a starter for dhokla and khaman batters.

Final Safety and Consumption Note


While traditional fermented foods of Gujarat offer significant nutritional and probiotic benefits, several safety considerations specific to the state's products should be noted.


For fermented lentil and grain batters (dhokla, khaman, handvo, idra, dokhli, patra): These products are steamed or baked, which kills all live microorganisms. They are safe for immunocompromised individuals, pregnant women, and infants. Batter that has fermented for too long (more than 12 hours in summer, more than 24 hours in winter) may become excessively sour (vinegar like) or develop off flavors. A putrid smell, visible mold (green, black, pink), or slimy texture indicates spoilage, and the batter should be discarded. For patra (colocasia leaves), the leaves themselves contain calcium oxalate crystals. Proper fermentation and cooking significantly reduce these crystals, but some individuals may still experience mild mouth or throat irritation. Starting with a small quantity is advisable.


For dairy products (dahi, chaas, mattha, lassi, kadhi, shrikhand, tuvar dahi, kefir): These are genuine probiotic foods when consumed live. They are generally safe for healthy individuals. For pregnant women, dahi, chaas, mattha, lassi, and shrikhand are safe and recommended. Kadhi, if gently heated (not boiled), retains some probiotics and is safe. However, pregnant women should avoid traditional kefir (due to the alcohol content) and should exercise caution with homemade tuvar dahi (camel milk curd) unless from a trusted source. For immunocompromised individuals, live dairy ferments are generally safe, but consultation with a physician is advised. Dahi that has been stored for more than 5 to 7 days, or that shows signs of mold, should be discarded. For shrikhand, if the dahi used was not fresh, or if the draining process was not hygienic, the product may be contaminated. Only shrikhand made from fresh, clean dahi should be consumed.


For fermented pickles and condiments (limbu achar, gulab ni kari, lasan ni chutney, rawaiya, chunda): These products have a high salt content (10 to 20 percent) and, in the case of chunda, a very high sugar content. Individuals with hypertension, congestive heart failure, chronic kidney disease, or diabetes should consume these pickles only in extremely small quantities or avoid them entirely. Pregnant women can consume these pickles in small amounts, but excessive salt and sugar intake should be avoided. For lasan ni chutney (garlic), the strong pungency can cause digestive discomfort in some individuals; start with a very small amount. For rawaiya (mustard greens pickle), the mustard content can be irritating to some individuals. Pickles that develop a slimy texture, unusual colors, or a putrid, rotten smell should be discarded. Mold growth warrants discarding the entire batch.


For fermented beverages (kanjhi, samoso, chaas, mattha, lassi): Kanjhi is safe and non alcoholic. Pregnant women can consume it. Kanjhi should be consumed within 3 to 5 days of preparation (longer fermentation makes it excessively sour). Any kanjhi with a putrid smell, visible mold, or a slimy consistency should be discarded. Samoso (tribal fermented rice drink) contains alcohol (0.5 to 1.5 percent or higher). Pregnant women should avoid it entirely. Individuals on medications that interact with alcohol should also avoid it. Chaas, mattha, and lassi are non alcoholic and safe for everyone.


For individuals on monoamine oxidase inhibitor (MAOI) medications: Aged products such as long fermented pickles (limbu achar stored for more than 6 months, rawaiya) and aged kadiya (sour curd starter) may contain elevated levels of tyramine. These individuals should avoid aged fermented foods or consult their physician. Freshly fermented products (fresh dahi, fresh chaas, fresh lassi, fresh kanjhi) have lower tyramine levels and are generally safe.


For general consumers: Start with small quantities of any new fermented food to assess individual tolerance. Fermented foods are generally safe for healthy individuals. Pregnant women, immunocompromised individuals, and infants under one year should consult a physician before adding significant quantities of live fermented foods to their diet. For cooked fermented products (dhokla, khaman, handvo, idra, dokhli, patra, jalebi, khari), no consultation is needed as these are safe for everyone.


Note on Commercial Products: Many commercially available dhokla, khaman, dahi, chaas, lassi, shrikhand, and pickles are pasteurized or contain preservatives. These products do not contain live probiotics. For probiotic benefits, traditional, homemade, or fresh (non pasteurized) products are required. For dahi and chaas, look for "live cultures" or "contains active bacteria" on the label. For shrikhand, commercially available shrikhand is almost always heat treated and does not contain live probiotics; only homemade or fresh (refrigerated, non pasteurized) shrikhand retains live microbes.


Note on Prohibition: Gujarat is a dry state, and the sale and consumption of alcoholic beverages is legally restricted. Traditional fermented beverages containing alcohol (such as samoso and tribal kefir) are confined to remote tribal areas and are not widely available. Palm toddy (kallu) is not a traditional product of Gujarat (unlike Kerala and Karnataka). Any mention of alcoholic ferments in this guide is for ethnographic and scientific documentation only.
