Any shoots with an ammoniacal smell (strong, urine like), a putrid smell (rotting vegetables), a slimy texture, or visible mold should be discarded entirely. Pregnant women should avoid raw fermented bamboo shoots due to the theoretical risk of cyanide exposure. Cooked karhi (added to curries and boiled) is safe. First time consumers should start with a very small quantity (less than 10 grams) to assess tolerance.
For fermented mahua products (mahua ferment, mahua handia): These products are alcoholic (alcohol content 3 to 8 percent). Pregnant women should avoid them entirely. Individuals on medications that interact with alcohol should also avoid them. The products are generally safe for healthy adults when consumed in moderation and when prepared hygienically. Mahua flowers collected from the forest floor may be contaminated with dirt, insects, or animal feces. Only flowers that have been properly cleaned should be used. A musty or moldy smell indicates spoilage.
For handia and other alcoholic rice beverages: These beverages are alcoholic (3 to 5 percent). Pregnant women should avoid them entirely. Handia is traditionally prepared using untreated water; this poses a risk of waterborne diseases. For safety, handia should be prepared using clean water. Handia that has fermented for more than 3 to 4 days becomes too sour and may develop off flavors; it should be discarded after 4 days. The use of ranu tablets from trusted sources is essential; ranu tablets prepared unhygienically may introduce spoilage organisms.
For fermented leafy greens (sag) and pickles: These products have a high salt content (5 to 10 percent). Individuals with hypertension, congestive heart failure, or chronic kidney disease should consume them only in small quantities or avoid them entirely. Fermented greens that develop a slimy texture, unusual colors, or a putrid, rotten smell should be discarded. Mold growth warrants discarding the entire batch.
For fermented wild tubers (gari, tarodi): These products are potentially hazardous. Wild tubers can contain toxic compounds. Only tubers prepared by experienced traditional practitioners should be consumed. First time consumers should start with an extremely small quantity (less than 10 grams). Any tingling, numbness of the lips or tongue, nausea, vomiting, or dizziness after consumption requires immediate medical attention. Pregnant women should avoid fermented wild tubers entirely.
For individuals on monoamine oxidase inhibitor (MAOI) medications: Aged fermented products such as long fermented pickles may contain elevated levels of tyramine. These individuals should avoid aged fermented foods or consult their physician. Fresh fermented products (basi, pej, fresh handia) have lower tyramine levels and are generally safe, though handia contains alcohol which may interact with MAOIs differently.
For general consumers: Start with small quantities of any new fermented food to assess individual tolerance. Fermented foods are generally safe for healthy individuals. Pregnant women, immunocompromised individuals, and infants under one year should consult a physician before adding significant quantities of live fermented foods to their diet. For cooked fermented products (chilla, dosa), no consultation is needed as these are safe for everyone.
Note on Commercial Products: Traditional fermented foods of Chhattisgarh are rarely available commercially in a live, unpasteurized form. Basi, handia, karhi, and mahua products are traditionally homemade or locally sold. Commercially packaged handia (in cans or tetra packs) is typically pasteurized and does not contain live microbes. For probiotic benefits, traditionally prepared, fresh products are required.
Note on Distilled Beverages: Distilled mahua liquor (mahua daru) and other distilled spirits are not included in this document as the distillation process destroys all live microorganisms.
